Bacon, egg and cheese non-muffin muffins

- grits (cooked)
- 3 eggs
- 2 pieces of bacon (cooked and chopped)
- handful of shredded cheese (your choice
- salt and pepper to taste
Instructions:
- Preheat oven to 350*
- Spray or line for 4 muffins
- Prepare grits per package instructions. I made enough for one serving
- Cook bacon to desired doneness. We like our cooked but still flexible
- Mix eggs (add salt and pepper if you like)
- Fill muffin tin about a 1/ 3 of the way with prepared grits
- Place in preheated oven for about 5 - 10 minutes. Depends on what consistency you want your grits. The longer the crunchier
- Pour egg mixture over grits.
- Sprinkle bacon and cheese over egg mixture
- Bake in oven for about 15 minutes
