BBQ Lentil Loaf

- 2 cups red lentils, rinsed
- 4 cups water
- 1 tablespoon olive oil
- 1-3/4 cups shredded carrots
- 1 cup finely chopped onion
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 2 cup shredded part-skim mozzarella cheese
- 3 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- BBQ sauce
Directions
- Place lentils and water in crock pot. Cook on low for 4 hours.
- Preheat oven to 350°. Spray a 9x13-in. pan with cooking spray.
- In a large skillet, heat oil over medium heat; sauté carrots and onion until tender, about 10 minutes. Stir in herbs. Transfer to a large bowl; cool slightly.
- Add cheese, eggs, seasonings, and lentils to vegetables; mix well. Spread in pan. Add a thin layer of BBQ sauce over the top of the loaf.
- Bake until a thermometer inserted into the center reads 160°, 45-50 minutes. Let stand 10 minutes before slicing.
