Beef Wellington Tartlets

- 1 pkg puff pastry
- 1 tbsp olive oil
- 1 white onion, finely diced
- 3 cloves garlic, minced
- 3 crimini mushrooms, finely diced
- 1 tsp dried rosemary
- ½ tsp dried parsley
- ½ tsp salt
- ¼ tsp pepper
- ~1 lb beef roast cut into small pieces
- 1 tbsp worchestchire sauce
- 1 egg, beaten
Directions:
- Preheat oven to 450 degrees. Spray a 12 cup muffin pan with non stick cooking spray.
- Heat oil in nonstick skillet over medium heat. Add onion, garlic, mushrooms, rosemary, parsley, salt & pepper; saute until browned.
- Unroll pastry sheet and cut into 12 equal squares. Place each square into muffin pan, then divide onion mixture into each.
- Using the now empty skillet, add beef roast pieces and worchestchire sauce. Cook until mostly brown; remainder will cook in oven.
- Divide beef into muffin tins. Brush egg over exposed pastry. Sprinkle with parsley if desired.
