Most of the recipes in this book are dated (The month of October is microwave cooking. Gross) but in reading this recipe I found a surprisingly healthy and wonderfully moist morning treat.

Ingredients:
- Nonstick cooking spray
- 1/2 cup whole wheat flour
- 1/2 cup quick-cooking rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon(I used closer to a full teaspoon)
- 1/4 cup cooking oil
- 1/4 cup applesauce(I used unsweetened applesauce)
- 3 tablespoons honey (I used a combination of 1 tablespoon honey and 1/2 tablespoon Splenda)
- 1/2 teaspoon vanilla extract
- 3/4 cups mixed dried fruit bits
- 1/4 cup chopped walnuts
Instructions:
- Spray a 10x6x2-inch baking dish with nonstick coating.
- In a medium mixing bowl stir together flour, oats, baking soda, and cinnamon; set aside.
- In a small mixing bowl stir together cooking oil, applesauce, honey (and in my case Splenda), and vanilla.
- Add the applesauce mixture to flour mixture; stir till combined. Stir in fruit bits and nuts.
- Spread the batter evenly in the prepared baking dish. Bake in a 350°F oven for 15 to 20 minutes or till a toothpick comes out clean.
- Cool in the dish on a wire rack.
- Cut into 16 bars.
