Boil and season water in a large stock pot add boneless skinless chicken breast. When chicken is cooked pull chicken out of water dice and set aside. Then cook 2 cups of rice in chicken water. When rice is done place in bottom of a 9x13 pan. In a large bowl combine diced chicken, 2 cans of cream of mushroom soup then refill the cans with chicken broth, then add about 16oz of sour cream. Mix well. Pour over rice. In another bowl, add 4 tubes of crushed ritz crackers, 4 sticks of butter and poppy seeds to,taste. Crumble with hands add to too of casserole. Bake in a 350 degree oven for 30 minutes
Tips. I have found it easier to cook chicken in large amounts of water so I can use it for rice and chicken mixture.
I also like more suace and less chicken. I didnt put how much chicken so you can decide how much you like.
I enjoy adding green veggies in the chicken and sauce mix. Green peas are my favorite.
