Creme Brulee Cheesecake Bars

- In food processor puree 9 graham cracker and 1/2 stick of melted butter.
- Press into the bottom of an 8x8 dish that has been covered with a good size overhang of aluminum foil.
- Bake at 350 for 8 to 10 min.
- Place dish on a cooling rack and turn oven down to 300.
- In food processor, puree 2 8oz bars of cream cheese, add 1 cup of sugar, 2 large eggs and 1 large egg yolk, pour in some vanilla and a pinch of sugar.
- Mix well, stopping to scrape sides often. Pour over graham cracker crust and bake at 300 for about 40 to 45 min (just until jiggly not firm).
- At this point, I turn off the oven and crack the door to the oven and let it sit for a few.
- Then I take it out to cool for a few hours. It should make 9 bars.
- I have found for me it does better to cover it and leave it in the fridge after cooling.
- Then I cut it into bars and sprinkle with sugar and place it under the broiler until browned.
- It will get that hard crunchy top as it cools again to eat it.
