Ham and Fruit Salad
Makes 6 servings.
I have made the decision to make a sammich of this and bring a fresh spinach and berry salad for lunch today. That's two salads! BOOM!!!
- 2 cups cubes fully-cooked ham
- 1 16-ounce can pitted dark sweet cherries, drained
- 1-ounce can Mandarin oranges, drained
- 1 cup chopped celery
- 1/2 cup mayonnaise (I used plain Greek yogurt)
- 1 tablespoon milk (I used cream)
- 1 tablespoon vinegar (I used apple cider vinegar)
- Additionally, I added about a tablespoon of fresh squeezed lemon juice and a dash of herbs de Provence. Season how wish.
- Combine ham, cherries, oranges, and celery.
- Blend together mayonnaise, milk, vinegar, and dash pepper; toss with ham mixture.
- Chill thoroughly.
