Healthy Trail Mix
Inspired by Healthy Life Kitchen by Marilu Henner
Every ingredient calls for 1/2 pound each but feel free to adjust it to your personal preferences. I use less carob chips since I got the sweetened kind.
Sunflower seeds
Pumpkin seeds (I got the lightly salted pumpkin seeds to tame the sweetened carob chips a bit)
Raisins (I used a mix of golden raisins and low sugar dried cranberries)
Almonds (I prefer the sliced almonds to whole)
Carob chips (optional)
A note about carob. In the 70's carob was touted as a healthy alternative to chocolate. I personally feel that this is the wrong approach. Chocolate is chocolate and carob is carob. Appreciate both for what they are. I myself haven't fully embraced unsweetened carob. If you can't get jiggy with carob then by all means just use chocolate chips. Again, if you want healthyish tail mix, use the chocolate chips sparingly and opt for chocolate that isn't whole milk.
In a proper container the trail mix stores well. I have found it to be a perfect little snack in late afternoon and I will mix it into my morning yogurt.
