Parmesan Crusted Chicken - For Two

I served this with mashed potatoes and steamed broccoli. And of course I made some gravy to go over the mashed potatoes. A side note about the gravy I used chicken broth as the liquid.
Ingredients:
- 2 small or one large boneless, skinless chicken breast
- 2 eggs
- 1/2 cup Parmesan Cheese
- Cup flour (more if needed
- Cup Panko or any breadcrumbs
- Herbs of your choice. (I used Penzies Mural of Flavor but have used Thyme on the past)
- Olive oil or vegetable oil (feel free to use butter for extra flavor) Just enough to cover the bottom of the pan
- Add more if needed
- Add more if needed
- Salt and pepper
Instructions
- Heat olive oil in frying pan over medium heat
- I add the salt and pepper to the flour and the herbs and Parmesan in that panko
- Bread the chicken. here is the order I do it on. Egg, flour, egg, panko
- Either cut your chicken lengthwise or pound it out. The goal is to have thin(ish) cutlets
- Place breaded chicken in heated pan. About 5 minutes each side. Just until browned
- Remove chicken from pan and put on a lined cookie sheet into a 350* oven
- Bake for no less than 30 minutes. The thicker the chicken the longer it needs to cook
