Paula Deen's Fried Chicken

Chicken Legs
Salt Water (Brine)
Eggs wash:
Eggs
Tapitio Hot Sauce
Batter:
Flour
S&P
Garlic Powder
Paprika
Oil or Lard (for frying)
I put the chicken legs in a salt water bath for 2 hours before frying them. Research showed they stay moist and draw in flavor. Mix the eggs and tapitio together until well blended. Mix the batter ingredients, then dip the chicken legs in the egg wash then batter. I double dipped half of my chicken to get a thick crispy coating. Place a couple of legs at a time in oil and fry for 10 mins with oil temp at 350°F.
