Pecan Waffles with Maple-Apple Topping
Adapted from My Year in Meals by Rachael Ray
Funny enough she made this recipe in September.
Suggested to serve up with baked applewood-smoked bacon.
4 McIntosh apples, peeled and chopped( I used Paula red)
1 1/2 cups dark amber maple syrup
1 cinnamon stick
Freshly grated nutmeg
1 or 2 slices fresh ginger
2 cups multigrain waffle mix ( I used Kodiak Cakes and added flax seeds, chia seeds and wheat germ)
2 tablespoons butter, melted, plus more for the waffle iron
2 eggs
1 1/2 to 2 cups 2% milk (I used unsweetened almond milk)
1/2 to 3/4 cups chopped toasted pecans
In a saucepan, combine the apples, maple syrup, cinnamon stick, a few grates of nutmeg, and the ginger. Let that cook into a nice spicy applesauce.
Meanwhile, heat the waffle iron. Mix up the waffle mix, butter, eggs, and milk. Stir in the pecans.
Cook the waffles on a buttered waffle iron on high until crisp. Serve topped with the applesauce.
Serves 4
