Peppermint Hot Chocolate

2 cups whole milk
1 cup heavy cream
2 tablespoons pure vanilla extract
1 1/2 cups sugar (I put more like 3 tablespoons)
16 ounces bittersweet chocolate, chopped (I went with about 6 ounces)
2 teaspoons salt (I used Trader Joe's salt with flower petals)
1/2 teaspoon peppermint oil (substitute with a candy cane as I did or perhaps peppermint bark)
Combine the milk, cream, vanilla, and sugar in a saucepan over medium heat. When the mixture is hot, add the chocolate and stir constantly until the hot chocolate is completely melted. Continue stirring whole adding the salt and peppermint oil. When the mixture reaches a simmer, remove it from the heat and serve immediately.
Makes 6 demitasse servings.
Homemade hot chocolate of this caliber isn't just a drink. It's rich, creamy and flavorful. It takes very little effort, so it allows everyone plenty of time to just sit and enjoy it.
