Ingredients
- 3 cups milk
- Salt to taste
- Dash of white pepper
- 1/2 cup whole wheat flour
- 1/2 cup coarse cornmeal
- 5 ounces New York or Vermont Cheddar cheese, grated
- 5 eggs, seperated
- 1/3 cup grated Gruyère cheese (or mozzarella)

Instructions
- Preheat the oven to 400°F. Pour the milk into a large saucepan. Add the salt and white pepper. Heat the milk over low-medium heat. Add the wheel wheat flour gradually, whisking steadily. Add the cornmeal and continue whisking steadily.
- Continue cooking until the mixture achieves a thick smooth consistency. At this point, add the grated Cheddar cheese and mix well. Remove the saucepan from the heat and allow the mixture to cool.
- Beat the egg yolks and add them to the mixture. Add the Gruyère (or mozzarella) and stir well until the ingredients are thoroughly blended.
- Butter thoroughly a soufflé dish or another oven proof dish. Pour the mixture into it. Beat the egg whites stiff and fold gradually into the mixture.
- Place the dish into the oven. Lower the temperature to 350°F. and bake for about 25-30 minutes, until the top turns golden brown. Serve immediately.
