I'm not a fan of lamb, it always tastes like wet hay to me. Then eggs came to mind. Spring, fertility, etc. I wasn't pleased with where my mind was heading. So I bought a donut pan. I've wanted to bake doughnuts for about a year. For Easter last year I got two new cookbooks for myself. I haven't used either until now. The Year of Cozy is a book of homemade everything, recipes, crafts and adventures. She made a pet teepee and her dog looks so happy in it. There's a recipe for baked Coconut-Lemon Doughnuts. When we moved into our new home back in Jacksonville, FL, we received a grill from Matt's grandparents as a house warming gift. We still have that grill today eight years later. I remember Matt grilling up chicken and I made a fruit salad. The whole family sat on the back porch floor because we didn't have patio furniture yet. We feasted that afternoon, and it was incredible. I will never forget the joy of being a new homeowner and grill owner. It seemed like the possibilities were endless. What a simple, pleasant memory! Love, 99 AngieWith the 60 and 70 degree weather here this week (we are going to forget the horrible storms earlier in the week) I sit here on the edge of my beautiful forest watching almost peach colored clouds drift along a perfectly blue sky to the tune of the birds chirping in the trees. The puppy who will never be outdone by the scenery, decides to run, roll and play in every leaf pile he can find. Someone up the street decides to grill and it makes me hungry, so today for my spring meal, its grill everything I can. With a little help from the puppy and the husband..... I really didn't season the food or get especially creative, I literally threw everything on the grill. So I guess I should be sorry for no actual food recipe but when you combine good food, family and the thoughts of friendships began by a love of cooking, that is the perfect spring recipe for a wonderful promise of fun to come. Ahhh... Springtime.. The weather is warming.. In most places flowers are blooming..Some of us are cranking up the grill.. But I think for all of us.. Our foods take on the flavors of a new season. In our house, we try to have one night each week devoted to some kind of salad typically because we are trying to be healthy and balanced. But this week, I made a Broccoli Salad that is very reminiscent of something I would have eaten as a child if my mother had eaten green foods. The broccoli taste is covered by golden raisins, sweet apples, and a tangy dressing. It's the perfect solution to get your 5-yr old to eat his broccoli because it's smothered in mayonnaise and sweetness. 😊 Healthy intent just left the building with this one, but try it anyways. This is the second salad challenge and I'm sure it won't be the last. Enjoy, Georgia, Amy, Nikita and Angie C This week was Amy's week and she wanted everyone to cook straight from the pantry. AmySo I offered up a challenge to make a dish with what everyone has on hand. Decisions... I went with an emergency survival dish. The kind of meal I make when my ass is broke. People of Saturday Bites meet Rent Week Ramen. That's the ticket. Here's how it's done: Grab a can of chicken broth and put it on to boil. Add a packet of Ramen noodles (just throw the seasoning packet out the window), frozen green beans and boil until everything is properly cook. It only takes about five minutes. While that's happening fry and egg. Over easy or hard, it's your show, do as you like. Remove the Ramen and green beans with tongs and place in a bowl. Add some soy sauce, hot sauce (or Chile sauce) and black pepper. Mix it up, add a little bit of the broth, if desired. Top with the fried egg. If you have some leftover cooked meat, fry that up and add. Or even Spam. Just slice it and fry it before anything else. And now you have a sweet bowl of Rent Week Ramen Angie C I had some leftover Chicken Marsala and veggies so I decided to make a Chicken Marsala Sheppards Pie. Sorry there are no measurements but here goes. I shredded the leftover chicken in bottom of dish poured the sauce over it. I then added leftover corn and green beans then a layer of garlic mashed potatoes and topped with cheese. I baked in a 350 degree oven for about 30 min. Carrie assured me it is delicious. GeorgiaWhen I was younger every so often mom would make a pot of beans. She would serve it with a skillet of cornbread. It would be many years before I understood the significance of that meal. Fast forward a few decades. I'm sitting on my dad and stepmother's front porch in Western North Carolina. Dad is telling me this story about when he was a little boy. (He had many stories about when he was a little boy) He remembered every so often his mother would make this encrusted apple and that would be dinner. He found out many years later that his mother would make that for dinner when it was getting on towards then end of his fathers pay period and that was all they had left. To him as a child it was a big treat having no clue about his parents financial situation. After dad told me that story I had a greater understanding for the pot of beans mom would make every so often and much like dad I had no clue about my parents financial situation.. I just knew it was good.. As for me.. I make a big pot of beans not because I'm financially strapped; I make it because it's a connection to my past.. Oh and because I really like them. I keep a lot of staple ingredients, and I stock up on exotic spices. I kept it simple this week because frankly I'm on vacation. (Matt has been cooking a lot this week.) I made chocolate chip pancakes as I ran out of blueberries and had to find something else in my pantry. I loved them, but the ruling was Christopher prefers my blueberry pancakes. Matt likes them plain Jane. The second picture is a Blueberry Cream frozen pie. I actually had everything in the fridge for this except plain yogurt (which I do usually keep.) It's was good but I served it really frozen. Next time, I'll thaw it for 30 mins before we eat. Come back alter for Angie C's addition.. Recently the husband and I have been watching "The Great British Baking Show" and love it.. Talk about being inspired.. Oh and I REALLY want to meet Mary Berry now.. Got to get cracken on that one.. NikitaTonight has been a fantastic start to a family staycation, and it all started with a campfire, food, and wiener jokes. A couple of months ago, we were trying to decide where to go on vacation for spring break this year. We thought, "Let's explore the southwest!" Then we saw 15-hour drive times and thought, "How about we fly somewhere?!" Then we saw out-of-budget airline tickets and thought, "How about we stay home and invest our money in a firepit!" That's the idea that stuck, and now we have a pretty awesome backyard where we can play with fire anytime we want. We cooked up some hotdogs, baby potatoes, brussel sprouts, and of course marshmallows. Good memories were made tonight. 😊 Love, 99 AmyIndeed this was a challenge! The reason being, it's been a dry winter here. We've had red flag warnings for days at a time. If you were to step outside my front door this morning you'd see a thick haze and smell the fire from nearby. so I erred on the side of caution...no actual campfire for this challenge! I couldn't decide on which food to make either. I have a cookbook in which there's a homemade smores recipe. I mean there's a recipe for Graham crackers, marshmallows...from scratch. I have the time to do this but I felt that it may just suck the joy out of living. Then I remembered Johnny Cakes. I found a recipe for Island Johnny Cakes. I felt my pulse quicken ever so slightly as I correlated Island with alcohol. A rum soaked pancake would hit the spot. Alas, I read the ingredients and no booze. That put me into something akin to a mild blue funk. I snapped out of it when I realized that campfire food is best served on campfire dishes. So...I ordered some enamel ware for the occasion! And I came up with a simple idea for the food challenge. Homemade hot chocolate and popcorn 2.0 Make two basic campfire staples with a foodie palette. These days popcorn isn't just salt and butter. I've been known to toss in Italian herbs and Parmesan cheese. Tumeric is lovely. The seasoning packs from Ramen taste better on popcorn. I recently read an article in New York magazine entitled The Cult of Condiments. It had a list of condiments from around the world that one can purchase via Amazon. One that caught my eye is from Rogue Creamery out of Oregon. Blue Heaven Blue Cheese Powder. Popcorn kernels are still pretty cheap, so it's okay to splurge on this yummy condiment. Plus it can be used on other foods. The next part of the challenge was to find a recipe for a hot chocolate that would compliment the blue cheese. I decided on one that I found via Bon Appetit magazine. This is a very deep, rich chocolate not to be taken lightly. And as far as hot chocolate goes, it's relatively healthy. And the closest I have to a campfire is my grill.. So I fired up the grill and grilled some burgers.. But I still wanted to make something campfire-ish.. And so I made an indoor version of s'mores.. FYI.. If a recipe says to broil something for more than a minute don't believe it.. Unless your goal is marshmallow flambe.. Once you get over the initial shock it's pretty entertaining.
