Amy I think the only challenge that could be less of a challenge is water. We get busy in life, so a simple challenge isn't a bad thing. Unless you decide to complicate it. On my route, I pulled off the interstate to a reliable Subway, home of the sandwich artist. I requested my all-time favorite: Tuna on Italian Herb & Cheese with white American cheese, lettuce, tomato, cucumbers, & mayo/ mustard combo. The real art here is to withhold your desire for wet condiments until after the artist has laid down a bed of lettuce and tomato. GeorgiaThe husband has Monday's off and our agreement is he makes dinner on Monday's. Well on one such night he introduced me to these yummy veggie sammies. Bread - your choice cream cheese veggies of your choice. On ours: lettuce, cucumbers, avocado and sprouts To me the most important ingredient here is the cream cheese. Well after a heavy dose of love Angie C Angie couldn't decide which sammie to make. So she made her two favorites Peanut butter waffle and Bacon, egg & cheese A few things going on.
The husband and I are moving.. (YAY!!) So I'm quickly running out of kitchen utensils. I'll still find a way to post something. But don't be surprised if I didn't make it.. My beautiful niece Nikita drove last night from Phoenix to Albuquerque to spend the weekend with me before we move. I confess, I'm crying as I type this. It humbles me beyond words. A special shout out to Nikita's husband Matt. Thank you for sharing your wife with me this weekend!! And lastly. For me this blog is less about me and more about the connections with these amazing ladies in my life. We all know that fellowship happens around the table. This is our virtual table. That place we all come together. Every week when I see that email from each of them with their recipes and photos I am reminded of just how blessed I am. The gift that they share is priceless. Angie C AmyTo begin with, I'm not a fan of Starbucks. Allow me to be more specific. I'm not a fan of Starbucks patrons and staff. They are a bit pretentious. Before I offend everyone, it could just be an anomaly that's indicative of South Florida. The baristas and their handlebar mustaches and douchebag attitudes pretty much made me explore Starbucks alternatives. I am truly all the better for it. But it should be noted that even a broken clock is right twice a day, right? With Starbucks it's their yummy London Fog. It turns out that some wonderful human being on Pinterest took the time to recreate this divine beverage and share the recipe with. I made slight changes to it to suit my taste buds. I had reason for choosing this for the challenge. It began to storm in the wee hours and continued through the morning. It's just a little cooler but soaked and gray outside. A perfect day for a cup of tea and to curl up with a good book. I did manage to go on a short walk between storms and found the egg in the photo on the ground. I couldn't find a nest near it at all. So I decided to place it with my food props. Angie C, Amy and Georgia GeorgiaSo this week I chose potatoes. I like potatoes pretty much any way you can serve them. Mashed potatoes for me are the perfect comfort food. When I wasn't well my mother in law always made mashed potatoes for me. Always! God love her.. Every week I share with the husband what is going to be on the menu and ask him if there is anything in particular he'd like to have. Well this week was no different. His suggestion was potato salad. My absolute least favorite potato dish.. But, he offered up a suggestion and I want to respect that. So I made a very basic potato salad. Oddly he loved it. He ate several servings and complimented it more than once. Even I enjoyed it Click below for recipe Simple Potato Salad Angie C Taco potatoes 4 medium potatoes cut into small wedges. 1 tbs Cooking Oil 1/2 pkt of taco seasoning Combine ingredients, mix well. Lay in a single layer on baking sheet, bake for 20 min at 425 turning once. AmyIf I'm asked which is my least favorite cuisine I'd have to say stereotypical English food. The boring, bland mostly boiled or greasy fried food that probably explains why some English citizens come off as.... emotionally constipated. Before you all feel compelled to come to the defense of the English, I never said that England isn't cool. Doctor Who, Monty Python, Mary Poppins, Harry Potter, Led Zeppelin, and that articulate moto named Shakespeare...all cool. Food wise, okay Cadbury and the Good Humour guy. It wasn't until the 1980's that an English chef earned a Micheline star. So there. And well done Marco Pierre White! By the way, look up photos of Marco Pierre White from back in the day, he was not too shabby. Anyway, I think that the English pretty much knew that their food sucks so they came up with silly names based on innuendo and flatulence. Oh, and false hope. There's spotted dick, bangers and mash, bubble and squeak...you get the picture. It took an English woman living in Paris to compel me to give bangers and mash another try. No, they are still boring...but the gravy! Oh la la! So here's my contribution to the humble potato, it's still humble just dressed up a bit. While I think this woild go lovely with rice I decided to couple it with tomorrow's baking thingy. I also made it a little different from Mollie's version. Rather than make a gratin, I chose to prepare it in a cast iron skillet on the stove top. I wanted a little bit of a bite to remain. I also made a cup of yummy Hot Tumeric Latte to go with. A little island off of the Mediterranean coast called Capri is home to few residents with perfectly white painted homes and quaint vegetable gardens in the backyards. The entire island is covered by lemon trees. They make Limoncello and sell it on every corner. While we were hiking down the mountain, we found a small cafe that made fresh lemon slushies. It was the most refreshing treat after a long uphill hike to Caligulas' palace. This week I found a Lemon Chicken Pasta with Asparagus. It took me back to Capri with the fresh ingredients but comfort food feels. It's really easy and perfect for a weeknight meal. What I've been thinking about is a meal Grandma made for my then 1 year old daughter and I 25 years ago. Yes, 25 years ago around this time Kirsten and I paid a visit to Georgia and my Grandma made supper for us. There was a roast chicken and butter beans and so on. A mini feast made with love by the sweetest lady. For dessert Grandma made ice box pie! Hot dog! That pie was fire! I savoured and raved throughout the entire meal. Grandma was modest and slightly ashamed that the pie wasn't from scratch. Who cares! It was delicious and made with a grandmother's love. Which is the purest love of all! Here's the thing, I've never even attempted to make that pie. Not once in 25 years. Until now. I watched Grandma make it. It's so simple, no one can have an excuse not to make it. Your Facebook will survive if you aren't on it for 15 minutes. Seriously, it shouldn't take more than 15 minutes. If you decide to make it from scratch, then 30 minutes and social media still won't collapse if you're M.I.A. I decided to search for a recipe as close to my Grandma's as possible because I wasn't certain about the measurements. Bloggers have bumped up the ice box pie game but I really wanted a simple recipe. It dawned on me to turn to that sweet talker Betty Crocker. Lo and behold! There it is. There's a slight variation to Grandma's. I recall that Grandma put confectioners sugar in hers. Betty Crocker went without. Grandma used and already made Graham crust (I went her route) and she used bottled lemon juice, I chose to use fresh. And most importantly, I too, made it with love.
