Georgia So oddly, even though this was my challenge and I was excited about making burgers.. And I did.. I neglected to take any photos. So you'll have to make do with the photo of the slaw I made to go along with it. Which I also forgot to take pics of but just happened to have leftovers of. Smash Burger Alfresco Jen Amy This will be short because I thought I'd sent an email days ago and I'm currently on my lunch break. I made black bean burgers. There's recipes all over the place. I believe I went with All Recipes basic recipe but went my own way with which veggies and seasonings went into my burgers. It's seriously easy to prepare and make. I decided to forgo a bun and made fries instead. Perfect on these warm summer nights. Nikita Amanda Good evening, Thank you for welcoming me to the group. So excited to get started so I picked Michael Symon’s Lola Burger. It was so delicious and easy. I even had all the ingredients. Since my family loved it, we will make it again soon. Nikita It is July 20th! Today, we celebrate the 50th Anniversary of the moon landing! We also celebrate a few birthdays - Mike Illitch, founder of Little Caesars Pizza; Stone Gossard, musician with Pearl Jam; Chris Cornell, amazing vocal talent; and.......ME! Even though my family are in different parts of the world today, I've received the loveliest messages and calls all day long. Christopher set his alarm clock to get up early and make me breakfast. Check out my Breakfast Bagel Sandwich below with a side of fruit. Matthew sent me the cutest flowers. After breakfast, Christopher and I visited a spooky-themed bakery that doubles as a museum for movie props and costumes. We went there for the scary desserts but did not find any. It was gluten-free anyway; I like my gluten. Check out the pics of some of the props and displays. Next, Christopher had the idea to drive around and collect all my "free food" gifts from participating restaurants, so we started with Firehouse Subs (my fave!) We also visited the largest candy store I've ever been to called Sweetie's. After indulging in some 80s classics, Fruit Stripe gum & Triple Power Push Pops, we found Key Lime Soda! (I do plan to make myself a Key Lime Pudding cake. Maybe tomorrow morning for Sunday Bakery) Let's raise a glass and celebrate all the moments - BIG and small - that help us make memories to last a lifetime. Georgia Did I take advantage of our Hello Fresh order this week (like the past few weeks). Why yes. Yes I did. Pork tenderloin with chimichurri. Where's the key lime you ask.. In the oh so delish chimichurri. Everyone's sharing there summertime / birthday fun.. My excitement so far. 2 lavender festivals. Finally found some lavender honey. Used a little this evening in some whipped cream. I'll share that next week Jen Amy Key Limes! That's specific. Most of the time I've had key limes in dessert type foods. And so I went on a quest to find something different. Surprise of surprises it was Betty Crocker to the rescue. How does Creamy Key Lime Enchiladas sound to you? They sounded pretty damn good to me. I tweaked the recipe a bit by switching out a salsa verde for enchilada sauce and a combo of feta and freshly grated parmesan for the cheeses. My tortillas were bring disagreeable so I tore them up and layered them so it was more of an enchilada casserole. I also pulled out the grill pan and coated it with olive oil and seasoned a couple of boneless skinless chicken breasts with key lime juice and Penzeys Mural of Flavor seasoning. This little casserole was oddly refreshing. I love Mexican food but it tends to make me feel sluggish. I stuck with the green theme and had an avocado to go with. Side Note: Thought it might be fun to share what I'm reading, watching, listening to this Summer. Key Lime, One niece's birthday (happy birthday Nikita!), One niece engaged (congrats Ashley), chimichurri, enchiladas.
Banner week! Nikita, Georgia, Jen & Amy. Side note.. Look for new Saturday Bites member Amanda. Looking forward to seeing her great recipes Amy Ladies and gentlemen say what you will about Rachael Ray but this pizza is perfect for summertime. Fresh peaches! I mean, damn Peach, Prosciutto and Pesto Pizza https://www.rachaelraymag.com/recipe/peach-prosciutto-pesto-goat-cheese-skillet-pizza-recipe I really wanted to taste the peaches so I used Feta instead of goat cheese. Perfect. Nikita Cheeseburger in Paradise! Well, maybe not paradise yet, but we're well on our way! I made a cheeseburger pizza off the back of the Boboli package. We've made pizzas in the past with pre-made crust, and it tasted like cardboard. This Boboli crust was legit! I'd even say a little squeeze of ketchup and mustard would make me believe I was eating a real cheeseburger! Perfect weeknight meal! I will buy another crust and try some other concoction of pizza again. Georgia I love pizza as much as I love tacos. And I love tacos. So when Amy mentioned we hadn't made pizza in a while I was ready. I just happened to order this from Hello Fresh when Amy threw down the challenge. I know I've mentioned how much I really like Hello Fresh, but I REALLY love it. Made this yummy flatbread.. On side note.. While chopping the jalepeno I made the mistake of popping the seeds out of the middle with my hands. It seemed to be a lot easier than trying to cut it out. It took a few minutes to figure out why my thumb was burning later. Jen Looking forward to seeing what Nikita has planned for us.
Until then, Amy, Nikita, Georgia and Jen Jen Our 4th of July was spent with friends! We had fun swimming and eating festive treats. We didn’t go anywhere to watch fireworks, but some neighbors were shooting them off super late while we were trying to sleep!! Hope you all had a fabulous day, and that your neighbors were more considerate. 😊 Amy For some reason I thought I'd sent my 4th of July recipe and I didn't. My bad!!!! Seriously though, I worked on the 4th and decided to toss some brats into the slow cooker that morning along with sliced onion, sauerkraut and white wine. I know a light beer is the norm but I liked the idea of sweet wine butting up against the intensity of the sauerkraut. It worked out well. I mixed together mayo, chili sauce, ketchup, finely chopped onion, 1 clove garlic and pepper. If you like pickle relish feel free to add that. Oh let the brats cook on low for around 8-9 hours. Turn the oven to 350° smear the spread on some hoagies then drop a couple of slices of Swiss cheese on them add a brat and kraut. Put them on an ungreased baking sheet and bake for 8-10 minutes until the cheese is lovingly melted. I want my cheese to be melted lovingly. As you can see, Zane in the cafe understands. Nikita
Georgia We really didn't do anything special for the 4th other than take a drive to one of the few National Parks in NM. that we haven't hit yet. The Chaco Culture Historic Center. It was a nice drive until you there and then it's about 12 miles down a beat up dirt road. The ruins are well worth the drive. I could bore you with the details.. Or you can click the link below if you are interested. Drive sucked, crow was cool (he just sat there as I took his picture), ruins pretty amazing.. Chaco Culture National Historic Park Friday I took a stroll through the botanic gardens. All in all it was nice Oh, if anyone asks. I made burgers but forgot to take photos. Hope everyone had a safe 4th as we wait for our next 3 day weekend.
