This was perfect for our family because we're snackers for sure. On Sunday, we were exhausted from adult chores and tried to relax for the evening with some yummy bites. I made Stuffed Mushrooms and Avocado Eggs Rolls from the Cheesecake Factory. The dipping sauce for the rolls was a cilantro lime sauce. Refreshing! I am finding week after week that I really enjoy baking more than cooking, and I need a good reason to make Maple Bacon Cupcakes. I made Raspberry "Breakfast" bars (or dessert bars) from Averie Cooks on Pintrest.They are sweet and chewy! I already had all the ingredients in my fridge and pantry this week to make them. 99 AmySimplicity Toast with plain yogurt, matcha and fresh raspberries. I mixed the matcha powder in the plain yogurt. Spread on top of the toast and topped with raspberries.My yummy breakfast. Happy Saturday!! Nikita, Amy and Georgia Amy Since it was my turn to pick the next challenge, I decided that it would be fun to celebrate the birthdays of two of the most important women in the American kitchen. In a time when housewives were turning to processed foods Julia Child basically said that will be enough of that! Through trends and fads the French have had it right all along. Julia Child is best known for French cuisine but throughout her she applied the French philosophy to everything she made. Not many of her recipes are daunting and complicated. And over the years people have adapted her recipes for say, the slow cooker. I seem to recall that her cassoulet takes up 6 pages in Mastering the Art of French Cooking. Throw that bad boy in a crock pot! Julia also holds a special place in my heart because shortly after our mother passed away Gigi offered to take me out to a dinner and a movie. I don't recall where we dined but I chose Julie and Julia as the movie. I absolutely love this movie. Side note: Julie and Julia is the food blog that basically ushered in food blogs. So we ladies of Saturday Bites give props to the genesis of this movement. As Julia did for our mothers, Martha Stewart has done for our generation. In this case, she has had to battle the microwave (guilty!) and fast food. And of course being an ex con and hanging with Snoop Dogg makes Martha a badass! Her crafts are beyond my skills but I love watching how they are made. Her cookbooks are concise. Her recipes are almost whimsical. She is telling us all that we are magicians, just follow the spells. Back to Julia for a moment. She was a spy in the O.S.S., so she was bad mama jama too! I picture Julia shoving a Nazi on the run's face in a toilet yelling "The butter for tonight's dinner WILL NOT be clarified. You will be forced to eat like a heathen!!!!". Which goes to show that women can kick ass all day and come home a make a bomb ass dinner every single night. Happy birthday Julia! We miss you. Happy birthday Martha! May you be blessed with many more. As for my contribution recipe wise, I decided on one of Julia Child's best known. Clafoutis. Simple,easy and versatile. Anything from cherries, berries, pears and prunes. Think of a Dutch Baby with a French attitude. For my version I used fresh apricots. It did not disappoint. I browsed the Julia Child recipes, and they were all so involved and looked a little intimidating (except for the scrambled eggs...lol). So I made Raspberry Muffins for our road trip to CA this weekend. Christopher has a soccer tourney in Oceanside. When we take these road trips, I like to cook food for the cooler. It saves us money and usually tastes better than fast food. I tested one while they were warm, and it was perfect. Sweet AND tart from the large chunks of raspberries. Amy, Nikita, Georgia and Angie GeorgiaIt was my week to choose our food challenge.. Let me just start with.. My sister gifted me a subscription to Bon Appetit Magazine.. Sooo fabulous.. But I digress.. Anywho.. In the most recent edition of Bon Appetit is a section on 5 ingredients dishes. Now I would love to say I made one for this challenge.. But.. I didn't.. I "borrowed" the 5 ingredient idea and made it our challenge. So all recipes this week will have 5 ingredients or less. There was a great debate soon after it was announced as to whether herbs and spices should count.. As you can see below.. Most of "us" didn't count them. In all fairness to the other ladies it is very hard to find even a simple recipe that uses just a few herbs and spices. Borrowed a page (Or plate) from Nikita and grilled some steaks this week (before the husband found a local butcher) Although the grilling was perfection the meat was only so so. Quality does matter!! But I also decided to grill some chicken the next evening. The husband and Savannah had everything prepared for me when I got home so all I had to do was fire of the grill and throw the chicken on. They had the chicken marinating in what looked like olive oil, fresh lemon juice, I recognized some rosemary and some other herbs. Savannah made a beautiful salad and Randy steamed some white rice. Which by the way I like with just butter and black pepper. gigi AmyI found this recipe about a month ago and had planned to make it asap. That didn't go as planned so I sent the recipe to Gigi. It got rave reviews. It is conveniently 5 ingredients. So now's the time to make it. Strawberries with Swedish Cream Courtesy of the New York Times 1 cup heavy cream 1/2 cup sour cream Sugar or honey, to taste 1 tablespoon any liqueur, like cointreau or amaretto (optional) 1 quart strawberries, washed, hulled, halved or quartered, if necessary Step 1: Whip the sweet cream until it holds soft peaks, then fold it into the sour cream, add sugar (or honey) to taste and liqueur if you like. Step 2: Put berries in 4 to 6 bowls or stemmed glasses and top with the cream. If desired, garnish with a leaf of fresh mint. I used a lovely raw cream honey and strawberries that I purchased at a local farm. If I were on death row I'd request this as part of my last meal! Nikita We've had a treasure trove of eats this week, and it's only Tuesday! I have two meals to dote on because they were both so scrumptious in their own right. On Sunday, Matt went grocery shopping with me as he does every week; we make it a family affair. And although we had already created a meal plan with an associated shopping list for the week, he passes some New York Strips that he could not leave without. So plans changed, and boy am I glad they did?! He grilled to perfection three steaks and sauteed some freeesh green beans. Just look at that picture, and tell me you wouldn't want to eat that steak! I'd call you a liar. It was medium rare, and the fat just melted in your mouth. I didn't even need the A1 Sauce! 😲 Kudos to Matt! Tonight, I made a Shrimp Boil from the all-reliable Pintrest. And I quote Christopher when he said, "That's the best dinner you've ever made! I could eat that every day." It tickles my heart to know my boys enjoy the food I put my heart into. The potatoes popped in your mouth when you bit into the skins, and the juices were filled with lotsa of Cajun flavors. Best part: It only took 30 mins to make. I know! 30 mins?! How is that possible? Well it is, and it was excellent. 😊 (If you subtract the seasoning, I only used 5 ingredients.) Shrimp Boil Recipe: Spice Mix: 2 tablespoons coriander seeds 2 tablespoons mustard seeds 1 tablespoon red pepper flakes 1 tablespoon dill weed 1 tablespoon allspice 1 tablespoon salt 3 bay leaves 3 quarts water 8 small red skin potatoes 3 ears corn, cut in thirds 4 smoked sausages, such as kielbasa 2 pounds shell-on shrimp Juice of 1 lemon Cocktail sauce, to serve Melted butter, to serve 1. Combine all the spice mix ingredients in a small bowl and mix well. 2. Add the spice mix, bay leaves and water in a large pot and add the potatoes. 3. Bring to a boil and 15 minutes. 4. Add the corn and boil for 10 minutes. 5. Add the sausage and cook for another 5 minutes. Take out a potato from the pot and check to see if it’s fully cooked. If not, cook until potatoes are fully cooked. 6. Stir in the shrimp and lemon juice, place the lid on the pot. Cook for 3 minutes. 7. Drain the shrimp and serve with cocktail sauce and melted butter with garlic and parsley. Love, 99 Angie4 Talipia filets 2 tbsp butter melted Juice of 1 lemon 1 tsp garlic powder 1/4 C Parmesan cheese Mix butter, lemon juice and garlic together. Brush this over both sides of fish. Broil for 5 min. Flip fish and sprinkle with cheese. Broil for 5-6 min more. Fish will flake easy. Serving up love.. One dish at a time.. Georgia, Amy, Nikita and Angie |
