NikitaTonight has been a fantastic start to a family staycation, and it all started with a campfire, food, and wiener jokes. A couple of months ago, we were trying to decide where to go on vacation for spring break this year. We thought, "Let's explore the southwest!" Then we saw 15-hour drive times and thought, "How about we fly somewhere?!" Then we saw out-of-budget airline tickets and thought, "How about we stay home and invest our money in a firepit!" That's the idea that stuck, and now we have a pretty awesome backyard where we can play with fire anytime we want. We cooked up some hotdogs, baby potatoes, brussel sprouts, and of course marshmallows. Good memories were made tonight. 😊 Love, 99 AmyIndeed this was a challenge! The reason being, it's been a dry winter here. We've had red flag warnings for days at a time. If you were to step outside my front door this morning you'd see a thick haze and smell the fire from nearby. so I erred on the side of caution...no actual campfire for this challenge! I couldn't decide on which food to make either. I have a cookbook in which there's a homemade smores recipe. I mean there's a recipe for Graham crackers, marshmallows...from scratch. I have the time to do this but I felt that it may just suck the joy out of living. Then I remembered Johnny Cakes. I found a recipe for Island Johnny Cakes. I felt my pulse quicken ever so slightly as I correlated Island with alcohol. A rum soaked pancake would hit the spot. Alas, I read the ingredients and no booze. That put me into something akin to a mild blue funk. I snapped out of it when I realized that campfire food is best served on campfire dishes. So...I ordered some enamel ware for the occasion! And I came up with a simple idea for the food challenge. Homemade hot chocolate and popcorn 2.0 Make two basic campfire staples with a foodie palette. These days popcorn isn't just salt and butter. I've been known to toss in Italian herbs and Parmesan cheese. Tumeric is lovely. The seasoning packs from Ramen taste better on popcorn. I recently read an article in New York magazine entitled The Cult of Condiments. It had a list of condiments from around the world that one can purchase via Amazon. One that caught my eye is from Rogue Creamery out of Oregon. Blue Heaven Blue Cheese Powder. Popcorn kernels are still pretty cheap, so it's okay to splurge on this yummy condiment. Plus it can be used on other foods. The next part of the challenge was to find a recipe for a hot chocolate that would compliment the blue cheese. I decided on one that I found via Bon Appetit magazine. This is a very deep, rich chocolate not to be taken lightly. And as far as hot chocolate goes, it's relatively healthy. And the closest I have to a campfire is my grill.. So I fired up the grill and grilled some burgers.. But I still wanted to make something campfire-ish.. And so I made an indoor version of s'mores.. FYI.. If a recipe says to broil something for more than a minute don't believe it.. Unless your goal is marshmallow flambe.. Once you get over the initial shock it's pretty entertaining.
