This week was Amy's week and she wanted everyone to cook straight from the pantry. AmySo I offered up a challenge to make a dish with what everyone has on hand. Decisions... I went with an emergency survival dish. The kind of meal I make when my ass is broke. People of Saturday Bites meet Rent Week Ramen. That's the ticket. Here's how it's done: Grab a can of chicken broth and put it on to boil. Add a packet of Ramen noodles (just throw the seasoning packet out the window), frozen green beans and boil until everything is properly cook. It only takes about five minutes. While that's happening fry and egg. Over easy or hard, it's your show, do as you like. Remove the Ramen and green beans with tongs and place in a bowl. Add some soy sauce, hot sauce (or Chile sauce) and black pepper. Mix it up, add a little bit of the broth, if desired. Top with the fried egg. If you have some leftover cooked meat, fry that up and add. Or even Spam. Just slice it and fry it before anything else. And now you have a sweet bowl of Rent Week Ramen Angie C I had some leftover Chicken Marsala and veggies so I decided to make a Chicken Marsala Sheppards Pie. Sorry there are no measurements but here goes. I shredded the leftover chicken in bottom of dish poured the sauce over it. I then added leftover corn and green beans then a layer of garlic mashed potatoes and topped with cheese. I baked in a 350 degree oven for about 30 min. Carrie assured me it is delicious. GeorgiaWhen I was younger every so often mom would make a pot of beans. She would serve it with a skillet of cornbread. It would be many years before I understood the significance of that meal. Fast forward a few decades. I'm sitting on my dad and stepmother's front porch in Western North Carolina. Dad is telling me this story about when he was a little boy. (He had many stories about when he was a little boy) He remembered every so often his mother would make this encrusted apple and that would be dinner. He found out many years later that his mother would make that for dinner when it was getting on towards then end of his fathers pay period and that was all they had left. To him as a child it was a big treat having no clue about his parents financial situation. After dad told me that story I had a greater understanding for the pot of beans mom would make every so often and much like dad I had no clue about my parents financial situation.. I just knew it was good.. As for me.. I make a big pot of beans not because I'm financially strapped; I make it because it's a connection to my past.. Oh and because I really like them. I keep a lot of staple ingredients, and I stock up on exotic spices. I kept it simple this week because frankly I'm on vacation. (Matt has been cooking a lot this week.) I made chocolate chip pancakes as I ran out of blueberries and had to find something else in my pantry. I loved them, but the ruling was Christopher prefers my blueberry pancakes. Matt likes them plain Jane. The second picture is a Blueberry Cream frozen pie. I actually had everything in the fridge for this except plain yogurt (which I do usually keep.) It's was good but I served it really frozen. Next time, I'll thaw it for 30 mins before we eat. Come back alter for Angie C's addition.. Recently the husband and I have been watching "The Great British Baking Show" and love it.. Talk about being inspired.. Oh and I REALLY want to meet Mary Berry now.. Got to get cracken on that one..
