Nikita As we continue each week's challenge, I tend to look to the people around me for suggestions on food challenges. Usually it tends to be Matthew who lends his ideas; however, it happened to be my old boss lady who gave me the idea of ravioli lasagna as we were leaving work one evening. She was recently promoted and now we work on the same floor again. It's always nice to see familiar faces at work, and I'm thrilled about the next steps she is taking in her career and family life. As we were riding the 5:00p elevator which stops at every floor on the way down, I received the text stating it was my turn to choose our Saturday Bites challenge. I looked at Alicia and asked her what was her favorite food. Out came Lasagna! And being as resourceful as she is a mother of 4 children, she tells me, "I have a really easy ravioli lasagna that I can make on weeknights, and it feeds the whole family." Here's the best part: you can use frozen ravioli with no prep cooking ahead of time. It took 10 mins to assemble and 45 mins to bake. ABSOLUTELY DELISH! I encourage you to look at the people around you and find out what foods they love! Georgia Fun fact. When Nikita threw down the lasagna challenge I was already planning on making a pan for a dinner party. The party isn't until tomorrow night, but I prepped it this evening and will finish it up tomorrow.
