Nikita Marie When Matt and I traveled to Split, Croatia, we found what we believed to be the Garden of Eden. A little island off of the Mediterranean coast called Capri is home to few residents with perfectly white painted homes and quaint vegetable gardens in the backyards. The entire island is covered by lemon trees. They make Limoncello and sell it on every corner. While we were hiking down the mountain, we found a small cafe that made fresh lemon slushies. It was the most refreshing treat after a long uphill hike to Caligulas' palace. This week I found a Lemon Chicken Pasta with Asparagus. It took me back to Capri with the fresh ingredients but comfort food feels. It's really easy and perfect for a weeknight meal. What I've been thinking about is a meal Grandma made for my then 1 year old daughter and I 25 years ago. Yes, 25 years ago around this time Kirsten and I paid a visit to Georgia and my Grandma made supper for us. There was a roast chicken and butter beans and so on. A mini feast made with love by the sweetest lady. For dessert Grandma made ice box pie! Hot dog! That pie was fire! I savoured and raved throughout the entire meal. Grandma was modest and slightly ashamed that the pie wasn't from scratch. Who cares! It was delicious and made with a grandmother's love. Which is the purest love of all! Here's the thing, I've never even attempted to make that pie. Not once in 25 years. Until now. I watched Grandma make it. It's so simple, no one can have an excuse not to make it. Your Facebook will survive if you aren't on it for 15 minutes. Seriously, it shouldn't take more than 15 minutes. If you decide to make it from scratch, then 30 minutes and social media still won't collapse if you're M.I.A. I decided to search for a recipe as close to my Grandma's as possible because I wasn't certain about the measurements. Bloggers have bumped up the ice box pie game but I really wanted a simple recipe. It dawned on me to turn to that sweet talker Betty Crocker. Lo and behold! There it is. There's a slight variation to Grandma's. I recall that Grandma put confectioners sugar in hers. Betty Crocker went without. Grandma used and already made Graham crust (I went her route) and she used bottled lemon juice, I chose to use fresh. And most importantly, I too, made it with love.
