Nikita Ok, you may be seeing a pattern with me. I'm on a meringue kick for the moment. This recipe was suggested on my Pinterest, an I'm so happy they got it right this time. These Lemon Meringue Nests are mini, cute, and pack a punch! I used a Lemon Curd recipe posted on a previous Saturday Bites article. This would be a fun baby shower bite or Easter dessert....in addition to the Carrot Cake. Nothing beats out Carrot Cake. Tip: Definitely pipe the filling into the nests to keep them clean. It was a lot easier than spooning it in. Georgia Always looking for fun new, healthy bake options. Found this blueberry muffin recipe using greek yogurt. Interestingly the recipe did not call for any time of fat. Which sounds like a healthier choice. But at what cost. Flavor.. That's the cost.. Note to self.. Flavor is not worth giving up. So the hunt continues to find a tastier option Jen Mini Frittatas. Quick and easy breakfast…made more fun because it’s bite size. I would definitely make these again!! I used a silicone mini muffin pan and they slid right out. Not sure if a regular muffin pan would work as well; I’ve had egg-stuck-in-muffin-pan disasters in the past that have resulted in pan meeting trash can. 😊 AmySo....mini food. What an odd trend. Did this start in Japan? They like tiny shit over there. I looked all over the world wide web for inspiration and thought this is what the Lilliputians probably nosh on. We're one step closer to the Jetson's Dial a Meal Pill. I wasn't very original but these little thingies are packed with taste. Rather than go to a lot of bother with the crust I sprayed the mini cups with cooking spray and filled them with whole wheat bread crumbs. Much easier. I added Crystal hot sauce to the egg mixture to give it a little kick. Quiche pieces... Fun with mini's
