Matt traveled to Columbus, OH this week for work which means I had to take my best shot at pressing this crust into the dish. Half of it collapsed onto the filling....whoops! What matters is the taste, right?! 🤣 Pumpkin Pie recipe off of the can. Love, 99 GeorgiaDepending on what you read and believe. According to several sources what you get in a can of pumpkin is not really pumpkin. One source states that around 1938 the FDA deemed pumpkin a squash and any squash could be used and considered pumpkin. Which means you can buy a can of pumpkin and it say 100% pumpkin and be butternut squash.. One source says to get the best, buy Libby's. Libby's is the only one that lists in it's ingredients a specific type of pumpkin. Dickinson's pumpkin. which looks a lot like a bumpy butternut squash.. Either way.. I feel we could handle world affairs much easier this way. Watch the horrible news of the day with our eyes buggin the same as when we made the unwise decision to watch The Human Centipede. If you haven't seen it, don't. I am still in outreach five years on. No amount of pie slices can make up for that. But maybe a slice after watching the nightly news couldn't hurt. I scanned multiple recipes for this challenge. I saw that clear pumpkin pie that's all the rage on the internet. Internet food fads can be a crap shoot. That can be the case both literally and figuratively. Mississippi Pot Roast is a winner. Cloud eggs, not so much. So I didn't bother with that recipe. I found what sounds like a divine pumpkin chiffon pie consisting of a crust made of ginger snaps and rum is involved. I may attempt that boozy concoction for Christmas. Because I deserve it! The funny thing about pumpkin pie is that I have never had a "go to" recipe. I enjoy trying something new every time. Pumpkin is a very versatile gourd. So I personally find no reason to repeat the same old thing. After reading about half a dozen recipes I simply decided to go with Ol' Reliable aka Farm Journal's Complete Pie Cookbook. And there's about 6 recipes. They all look wonderful. I went with Pumpkin Pecan Pie because I'd just bought a bag of pecans at Custar Farm. A big ass Ziploc full. The pecans come from trees at the farm! If I weren't so lazy I would have used fresh pumpkin as well. But I ain't that into cooking. This is the best pumpkin pie that I've made thus far. I'm not sure if it's because of the pecans or the Penzey pie spice. Perhaps both. It has the same flavors as pumpkin pie spice but with a little bit more. The blend tastes so fresh and sublime. I really cannot emphasize how much I love this pie spice. So props to my friend Lisa for introducing me to the wonderful spice world that is Penzey. And once again I have to acknowledge and thank my stepmom Pat for giving me this little treasure of a cookbook.
