NikitaWhen we go out to eat, there are a few meals that we will NOT order. Anything pasta, steak (Matt does it way better), & nothing on the kids menu (mac-n-cheese, chicken fingers, etc). I'm usually disappointed, and I start thinking we could do it way better at home. Here is a lighter version of shrimp scampi with no butter and pasta. AmyMay has been a very surreal month for me...a series of highs and lows. Yesterday was a terrific high that I've decided to carry over to today, Mom's birthday. She would have been 78 today. My recipe will honor one of Mom's favorite food stuff. About last night though.... The magnificent Philbrook Museum in Tulsa has a movie series every Summer. On the last Friday of the month the museum shows a movie on the lawn. Gigi and I have been to the Philbrook together so I know that she's able to envision the sight of people on blankets, trees, fireflies and The Princess Bride on the big screen. It's over by the hippo statue Gigi! So my friend Requita and I decided to make a day of it. We decided to go to dinner first. I had a taste for Pho, as it turns out there's several restaurants in Tulsa that serve Pho. Off to Pho Nhi Vietnamese Noodle Restaurant! This is by far one of the very best dining experiences that I've had since moving to Oklahoma. This isn't a restaurant review but it leads up to my favorite restaurant food...at the end of the meal we ordered iced Vietnamese coffee. If you LOVE coffee, this is a must. I've attempted to make this drink at home before with little success. I knew the problem with my version was the coffee itself. The recipe clearly states Vietnamese coffee and I didn't have any. Until last night. Located beside the restaurant is a huge Asian market. After the food orgy we went to the market and I was able to pick up the proper ingredients at very affordable prices! And coffee was one of Mom's favorites. So, Happy Birthday Mom, Vietnamese style! Vietnamese Iced Coffee Recipe via Bon Appetit 2 tablespoons dark-roast ground coffee (preferably Trung Nguyen Premium Blend or Cafe Du Monde Coffee with Chicory) 2 tablespoons(scant) sweetened condensed milk Make coffee, stir in condensed milk until blended. Add ice, stir, and serve. Okay I have a feeling that I may have submitted this recipe before. But now it's "authentic" so..... Sorry folks. The husband and I have moved. Kinda. We are currently living in a hotel. So I've lost track of time. I honestly thought yesterday was Saturday. So I'm going to post both. Yesterday was mom's birthday. Today is my stepdaughter Savannah's birthday. Banner weekend. G
