AmySo after burning our candles at both ends during the holidays my creative juices had evaporated. Hence this week's food challenge. Just...you know....make...whatever. Luckily, Heidi over at the outstanding food blog 101 Cookbooks is bursting with energy. I've followed her blog for years but rarely made anything from it. I received an email earlier this month with a plethora of easy vegan recipes. I am far from vegan but Heidi knows her shit. Vegan enchiladas jumped out at me. I hadn't made vegan enchiladas before so why not? Quick and easy, bonus. I used small corn tortillas( street taco size) and ate two. I was pleasantly full without feeling icky. Would I make this recipe again? In a heartbeat! If you want to eat a bit more healthyish, give these bad boys a try. Quick Vegan Enchiladas with Sweet Potato Sauce From 101 Cookbooks Nikita For years, I have wanted to make the ever so mysterious and illusive Macaron. I read many blogs and recipes and found this simple one: French Vanilla Macarons. This was my first attempt and lessons were learned. 1: My oven cooks hot and they browned a little. 2: If they stick to the silicone, freeze them to peel them off. 3: You better make a couple dozen because they are addictive! While they may not be beautiful, they tasted amazing! Crisp on the outside and chewy-sweet on the inside. Matt and Christopher even said the flavor had a similar flavor to Oreos. Hmmmm...no chocolate but an almond and vanilla flavor. I tried another new recipe for Sunday Bakery, so check it out tomorrow. Georgia Once again my work schedule was a little crazy, but the hubs tried something new-ish. He made his world famous tacos. But this time with chicken. What makes his tacos world famous? He sprinkles the corn tortilla's with Parmesan cheese after heating them in oil. Truly.. It makes all the difference. Below is a sliced cucumber sprinkled with Tajin Who knows.. Maybe next week I'll actually cook or even bake. JenChocolate cake makes everything better, right? Especially if you can make one in the microwave in a few minutes!! I found a recipe for a microwave chocolate mug cake that satisfied my craving. It looks messy if you mix it up directly in the mug like I did (half batch), but who wants to do extra dishes if you’re already going the lazy route with a microwave cake? Obviously not as good as a baked cake, but I would make this again. I topped mine with some chocolate syrup. Ice cream would be a great topper also. Lots of fun new recipes tried this week.
