Simple Potato Salad

I add sour cream to most mayo based salads. It adds more tang and a creamier dressing.
Ingredients:
- 2 boiled eggs
- Handful of red potatoes (skin on)
- Mayonnaise
- Sour cream
- Mustard
- Apple Cider Vinegar
- Paprika
- Salt & Pepper
Instructions:
- Cut red potatoes into bite size pieces
- Using a medium size sauce pan add potatoes, water and a salt
- bring to a boil and cook until potatoes are al dente
- While the potatoes are cooking. Cut hard boiled eggs to your desired size. I use an egg cutter and slice in both directions, so eggs were small yet still able to maintain their shape
- Add mayo, sour cream, mustard, apple cider vinegar, salt and pepper. I usually don't measure so I can't give exact amounts. But more mayo then sour cream. And neither of us like a lot of mustard in our potato salad, so I added just enough to add to the flavor not over-power it
- Mix it all together. If you like yours swimming in the mayo, add more.
- Sprinkle with paprika
