NikitaThe Great British Baking Show has become a new favorite of mine and hours upon hours have been spent binge-watching it. Christopher has even become quite the fan of watching extraordinary amateur Brit Bakers create the most tasty and beautiful treats. As much as I would love to try to recreate some of their challenges, I just don't have the endless supply of ingredients to bake or energy to wash the dishes. I did, however, try to recreate a popular candy & cake topper called Honeycomb. The Brit Bakers use Golden Syrup in their concoctions but the recipe I used called for corn syrup and honey. Golden Syrup is not easy to find in your local grocery chain. It came out just perfect and took less than 10 minutes to whip up. It takes about an hour to harden. I made this naked Chocolate Chocolate Chip three-layer cake with Cream Cheese Frosting and a Chocolate Ganache Drip topped with Mixed Berries. Ganache drip was a little thicker than I had hoped for but overall I'm very pleased with the cake. My family had the opportunity to each this copycat chocolate cake recipe from Nothing Bundt Cakes and it. is. FANTASTIC! Spoiler Alert: Recipe calls for Boxed Cake Mix and a Bundt Pan. You would never know though after you add in your fixings of sour cream and pudding. Give it a try! You won't be disappointed. JenI got a BIG bag of lemons from a neighbor, so the recipe fun continues! This morning we made Lemon Crumb Muffins. The crunchy top is amazing, but I think the muffin itself could use a lot more lemon flavor. Next time I would double the lemon. Also, the lemon glaze says it’s made with regular sugar, so the texture is gritty; I just microwaved it into a simple lemon syrup before drizzling it on. And my daughter made a big pitcher of lemonade. I think we’ve used only half of our lemons so far! Happy baking ya'll!!
Nikita and Jen Cammy What happens when you want to make macarons and the recipe you find simply didn't work for you but another recipe has in the past? Well you make up your own recipe from each of the other two recipes to make it work for you! :) These turned out just the way I imagined they would. The macarons cinnamon/nutmeg flavors pair perfectly with the filling's eggnog flavor.
