AmySince I had great luck with my sweet potatoes I decided not to push said luck and avoided the oven for a Sunday treat. I found this recipe on Food52 and it's easy and versatile. Banana jam is an excellent way to use up ripe bananas. Spread on breads with peanut butter right down to throwing it into a margarita. I broke up Graham crackers in a bowl and topped with yogurt and banana jam. If you don't wish to use rum then add extra vanilla extract or coconut or maple extract. Enjoy! Amy and Georgia Amy I didn't bake this week. Rather I spent my Saturday with a great friend. She and I stopped by the bakery and picked up cheese cake bites. We headed to her place and she made tea. We enjoyed the snackens and tea as we watched Hidden Figures. Have you seen Hidden Figures? It's excellent. But I digress. Sure baking is fun but sometimes it's alright and okay to let someone else do the work. I rather enjoyed the fruit of someone else's labor this week. GeorgiaLast Sunday's Minghelli dinner theme was Russian. Although I don't think this cake is an authentic Russian cake it does have a Russian Buttercream.. So.. Good enough for me. This cake was just a yummy as it was beautiful and the sweetened condensed milk in the buttercream frosting is what sets this cake apart. And Happy Sunday Amy and Georgia Here's a super easy one that you all might like to try for shits and giggles! Spinach and Cheese Stromboli From The PDQ Vegetarian Cookbook While this is a meatless Stromboli you could easily add, say, leftover roasted chicken. Or switch to Swiss Cheese and tuck some deli ham in this. 6 large spinach leaves, tough stems removed 1 (10-ounce) can refrigerated pizza dough 1 tablespoon Dijon mustard Dried oregano, to taste (I used Penzeys Frozen Pizza Seasoning) 8 ounces (2 cups) already-shredded part-skim mozzarella cheese Preheat oven to 400°F. Lightly oil a large baking sheet and set aside. Fill a kettle or pot with about 6 cups water and bring to a boil. Place the spinach in a colander; slowly pour the boiling water over the spinach. Drain well, pressing down with a large wooden spoon to extract most of the liquids. Place the spinach between paper towels to blot completely dry. Unroll the pizza dough on the prepared baking sheet and pat into an 11x13 inch rectangle. Spread the mustard over the dough to within 1/2 inch of the edges. Arrange the spinach leaves down the center of the dough, leaving a 3-inch border on either short edge and a 1/2-inch border at either long edge. Sprinkle the spinach lightly and evenly with oregano, then with half of the cheese. Sprinkle again with the oregano, followed with the remaining cheese. Fold one short side of the dough, then the other, over the filling, pressing to seal, then fold in top and bottom, pressing to seal. Bake in the center of the oven 7 to 10 minutes, or until the top is lightly browned. Remove from the oven and turn over with a wide spatula. Cut 2 small vent in the top and bake 7 to 10 minutes, or until top is lightly browned. Let stand 15 minutes before slicing. Serve warm. Much like Amy, I went easy this week and made a cake in a mug. I ended up making these Kolaches. They turned out to be pretty tasty. AmyThis may not look like much but dressing it with some fresh fruit does help. The original recipe calks for a 9x13 pan but I easily downsized it to a bread loaf pan.
