Amy I may have shared this recipe before. But it's worth repeating. Glenn’s Banana Bread with Chocolate Chips and Candied Ginger From A Homemade Life by Molly Wizenberg 1 cup granulated sugar (I used soft brown) 1 large egg unsalted butter 2 ripe medium-size bananas 3 Tbs milk 2 cup unbleached all-purpose flour 1 tsp baking powder ½ tsp baking soda 1 cup chocolate chips (I used 100g dark chocolate cut into chunks) Small chunks of candied ginger, to taste (I used stem ginger in syrup) ½ cup chopped walnuts, optional Preheat oven to 350 degrees Fahrenheit. Grease a 9- by 5-inch loaf pan with butter or cooking spray, and set aside. In a large mixing bowl, cream sugar, egg, and butter. In a separate bowl, mash bananas; then mix with milk. In another separate bowl, sift together flour, baking powder, and baking soda. Add flour mixture to butter mixture in three parts, alternating with banana-milk mixture in two parts, stirring by hand until just combined. Stir in chocolate chips, ginger, and optional nuts. Turn batter into loaf pan, smoothing top with the back of a spoon, and bake for one hour, or until a toothpick inserted in the center comes out clean. Allow to cool for a few minutes; then remove bread from pan and cool on a wire rack. Georgia Several weeks ago I found these cute little Easter cupcake cups and sticks so of course I HAD to make the appropriate cupcakes. Carrot cake cupcakes. Carrot cake is my favorite!! In my humble opinion they are the perfect food. They cover all the food groups. I found this lovely recipe that uses applesauce. What I like about any carrot cake recipe that calls for either applesauce or crushed pineapple is it not only adds a nice flavor to the cake it also makes for a much moister cake. This one was no exception. What I LOVED about this recipe was the cream cheese frosting. If you aren't adding cinnamon to your frosting, stop what you are doing and start adding it. Especially those frosting that is for a spice type cake. People who are not frosting fans (yes there are people who don't like frosting) they all raved about this one. Adorable and delicious.. A winning combination. Oohh.. I just read Amy's recipe that called for candied ginger and it reminded me of this recipe I saw recently for ginger, chocolate chip scones.. One of the young ladies I work with happened to taste a madeline for the first time the other day and fell in love with them. I was a little surprised she had never heard of them before so I made these French chocolate Madelines for her and the rest of our team A couple of tips for making madelines. You need to have a madeline pan. Wait until they are completely cool before storing them, they are like little mini sponge cakes and will get a little gummy if stored while still warm Georgia Not quite a bake. But it was still cooked in the oven.. So close?!?!
Anywho I found this recipe in the latest edition of Bon Appetit and thought.. Hmm.. This looks like something I need to try. So I did.. I didn't have any Za'atar on hand.. Because who does? So I reached out to my friend Mr. Google and found what the blend was made of. (See second recipe) I roasted some brussell sprouts to go with the chicken. The verdict.. I really liked it. Great flavor. The chicken was cooked to perfection. The husband said the chicken was cooked nicely.. The flavor.. he wasn't so wild about. You'll have to give it a try and let me know what you think. Until next week, Georgia Amy I made stir fry the other day and had a couple of cups of leftover rice. Rice pudding it is. I love eating rice pudding in place of oatmeal for breakfast from time to time. Mix it up a bit. I found a recipe for a lovely rice pudding in Breakfast Lunch Tea:Rose Bakery by Rose Carrarini. Since I had cooked rice, I cut the baking time in half. Also, I 'm feeling lazy so I took a photo of the recipe as opposed to tying it up. Whatever. It's still a yummy rice pudding. There. I think we all need less stodgy masses in our lives
