NikitaWhile we are all sitting in lockdown, I've been tackling my "homecook bucket list." Mission: Pita Bread was a success! AND my pitas have pockets! Check it out below. You do need about 1.5 - 2 hours to allow the dough to rise, but the recipe was easy to follow and requires the simplest ingredients which you probably have in your pantry right now. Get off the couch, and try this recipe. You won't regret it and think of how accomplished you'll feel.
NikitaHappy Easter from the Orthodox side of the world! We are celebrating a week later than our friends and family back home but celebrating His resurrection none-the-less. Carrot Cake happens to be one of my favorite desserts of all time, and I remember loving it going all the way back to 7th grade. At my school, their were two 7th-grade science teachers who were married and in their later years of life. They taught their classes in adjoining classrooms and often rivaled them against each other. Apparently there was a big debate between the couple (as often there usually is) regarding who made the best Carrot Cake. Each teacher had his/her own recipe and brought in cakes for us to sample and vote. My teacher (the wife) had an incredible recipe that included crushed pineapple. It kept the cake moist and sweet. She handed out the recipe to her class, and I made that cake for years. Family events, holidays, etc.....everyone in the family would dote over my Carrot Cake. Sad to say, I don't have that recipe anymore but have found many very similar to the original. Today we are celebrating, so bring on the cake! Happy Easter everyone! He is RISEN! He is risen indeed

Here's the breakfast for you. Baked apple pancake in a cast iron skillet. YUM! Happy Easter! Georgia NikitaYes, these Cinnamon Rolls are drowning in icing and that's ok. This week has been the looooooooongest week and was deserving of some exhilarating sweetness. Because of our semi-quarantine aka lockdown or whatever you want to call it, I've been keeping busy in the kitchen. My goal was to tackle one of those recipes that I've always felt was impossible. I tend to put some foods on a pedestal as if they were out of my talent range. Creme Brûlée was once one of those impossibles until I tried it and found out it was so easy! Macarons also used to be untouchable. I'm still no macaron wizard, but I have acquired a basic skill and produced a mighty fine batch of these fickle treats in the past. Cinnamon Rolls have now been conquered! It took two attempts. My first batch didn't rise within the timeframe given in the recipe. I was certain that my instant yeast must have been bad, but now I'm thinking they needed more time to rise in the warm oven after seeing my second batch respond the same way after sitting in the warm oven for 20 minutes. Out of frustration, I decided to leave them in the oven for almost an hour to see if any rise occurred. Whataya know! They really plumped up and were ready to bake. We demolished this entire pan in under 24 hours. They were best right out of the oven and after glazing. Well worth the effort! Georgia While in So Florida earlier last month the husband and I hit up a couple of Cuban Bakery / Cafe's One such place called Tulipan in North Palm Beach sold these lovelies called Alfajores. Fun fact. None of the ladies working at the bakery had any idea what they were called. Thank goodness for some great friends in the South Florida area who knew right away what they were. Ever since returning home I was on a search to find the name and a recipe. I ended up taking pieces from about 2 different recipes. The cookie part from here: Alfajore cookie Dulce de Leche & Chocolate (to cover the cookie) from here: Dulce de Leche The final verdict. Cookie was not quite the same. The hubs liked Tulipan's better. He said Tulipan's was more like shortbread. I kinda like this one better because it wasn't as dense. Homemade Dulce de Leche is always a winner and quite frankly you can dip virtually anything in chocolate and call it good. Either way. Both were delish and we walked away with some pretty fantastic memories I know Nikita has been baking up a storm and I've started to bake more. So I imagine you should be seeing more fun baked items.
