NikitaI did it! I did it! Blueberry Donuts with a Lemon Zest Glaze. Rule #1: Do not overfill the donut pan. When it says "fill each donut mold 3/4 full", do that. My first batch did not look like a donut so much rather a danish filled with dripping lemon glaze pooling in the middle. Christopher still loved them though. He said it was his favorite part. These were a little soft because I ran out of butter and used canola oil instead. But I'm proud of myself that I altered a recipe a little, and it was still successful. Recipe: INGREDIENTS
Step 1 Preheat oven to 350 In a medium bowl whisk together the flour, sugar, baking powder, baking soda, cinnamon, and nutmeg. In a separate bowl whisk together the egg, butter, milk, yogurt, and vanilla. Gently stir the dry into the wet, and mix just until combined. Stir in blueberries. Step 2 Fill a greased donut pan 3/4 of the way full and bake for about 9 minutes. Let cool slightly before removing from pan and glazing. Glaze Step 3 In a small bowl whisk together powdered sugar, zest, and lemon juice until a glaze forms. It should be a glue like texture. Add more sugar too thicken, or more milk to thin it out, as needed. Dip tops of donuts into glaze, or spoon glaze over each donut. AmyMany years ago Gigi made this delightful vegetarian pizza that wasn't the regular red sauce fair. While I don't remember it to a tee, I am able to recall the essentials. I decided to give it a try but with bacon. The end results were quite pleasing. Pizza! One premade pizza crust (such as Boboli . From a tube works as well) 2 large potatoes 1 leek or onion 4 slices of bacon Sour cream Freshly grated Swiss Cheese Rosemary Salt and fresh cracked black pepper If using pizza dough from a tube spread it on a cookie sheet. If you'd like brush the pizza with some fresh garlic and olive oil. Bake for 8 minutes in a 400° oven. Scrub potatoes and dice up place in a microwave safe bowl with water and cook in microwave for 5-7 minutes. I don't have a microwave so I boiled on the stove for about 20 minutes. Chop up leek (or onion) and bacon (if using) and saute in a skillet for around 5 minutes. Drain potatoes and add to leek mixture. Spread sour cream on cooled pizza, pile on potato/leek/bacon mixture few grinds of salt and pepper, rosemary then top with grated Swiss Cheese. Pop back into the oven and bake about 15 minutes top. It's funny how at least one of us bakes something. This week I've been crazy busy, Amy's phone took a poop (her primary source of communication), I'm fully engrossed with the packing and moving thing. So neither of us were able to participate.
