GeorgiaRicotta was the food challenge this past week and my Saturday Bites recipe did not call for a full container of ricotta. So I decided to find another bake recipe to use it up in. These cookies were really tasty. More cake like, less cookie. The flavors were very subtle. Not overly sweet.. A simple lemon glaze. All in all a tasty little cookie. Glad I went simple because who can compete with a yummy peanut butter pie (Happy Birthday Mom!) and a banana / pineapple Hawaiian cake AmyOn Monday (May 27) Mom would have turned 79. So to celebrate I decided to take a crack at one of her very favorites. Peanut Butter Pie. I have never made this before so I wasn't exactly sure of myself. I pretty much nailed it. But if I were to make it again I don't think I'd bother with the whipped cream. Maybe a touch of chocolate syrup. The recipe calls for a double boiler. If you don't have one don't rush out to buy one. Unless you plan on using it a lot. I simply put a saucepan of water on to boil then use a stainless steel mixing bowl as the top. Just be mindful and keep a pot holder with you. For this recipe you can use either a 9" baked pie shell or a graham cracker crust (baked or unbaked). I made a graham cracker crust. Nikita I want it to be known here on Sunday Bakery that I sold my first half sheet cake. It is a Banana & Pineapple cake. It has the makings of a Hummingbird Cake but no nuts. I'll tell you this feat was not easy for me. I had to bake the cake twice because I forgot the baking soda the first time. Trying to find twelve ripened bananas at the grocery store at 10:30pm almost gave me a heart attack. I also took on the challenge of working with fondant. I bought white fondant and dyed it to make the surfboards and graduation hat with tassel. The icing is a classic cream cheese with crushed graham crackers as beach sand. The ocean is also cream cheese frosting dyed two different shades of blue and topped with a clear piping gel to give the reflective quality of water. I'm even proud of the piping work. Not too shabby. It took me five hours and most of the skills used here were learned on YouTube. The best part was when I showed Steve his graduation cake for his Hawaiian Luau party, he smiled and said he loved it! Melted my heart to know someone loved it as much as I do. As per the norm for most this time of year we pull out our grill and commence with grilling season. Last week was no exception for me and many others. I find that I'll grill most anything that can handle it. Meat, veggies and even fruit. Grilled pineapple and grilled peaches are amazing when grilled. Well we had some apples leftover and I thought what the heck. Let's grill them. I just drizzled them in olive oil and sprinkled some brown sugar and cinnamon on them. Grilled on each side for just a few minutes. The were a lovely combination of soft and crispy. The sugar and cinnamon created a nice little glaze AmySeveral months ago I had read a New York Times article about a traditional Canadian recipe that has been making a come back. No not poutine. A delectable little treat known as the butter tart. When I began reading the article as a bit skeptical. Perhaps it was because of the song Admiral Halsey by Paul McCartney and Wings. "The butter wouldn't melt so I put it in a pie. Alright!". So yeah, a vision of a stick of butter in a pie that's been on the back of my brain for 40 years didn't help. I read the article and filed it away in my memory. I recently read a different blog that had posted the recipe. With butter tarts the suggested filling happens to be raisins. Again this did not help make butter tarts appealing to me. It wasn't until I read suggested fillings on this blog that I decided to give butter tarts a go. But with my own spin. For one, I made a basic version because I simply wanted taste a straight up butter tart. And two I had some blueberries that I needed to do something with ASAP. So I made butter tarts and blueberry chia jam. I've made blueberry chia jam for the blog before but this time there's a slight change up. I spooned some jam directly onto my plate and had lovely cup of black tea with lavender to go with. These tarts are a culinary revelation. There's room to make them a little different every time. I think I will use pecans in the filling next time. And in Autumn/Winter some sort of cranberry orange compote to go with. Perhaps mini muffin tins for tarts for parties or potlucks? I'm sharing links for both recipes. With the tarts I omitted lard in favor of shortening. I'm not anti-lard just pro heart health. Beyond that I followed the recipe as is. I believe that this is pretty much the same recipe as the New York Times article. If you are curious about that article it will pop up when you search for butter tart recipes. Happy baking Amy and Georgia GeorgiaYa'll these cupcakes are so freaking amazing.. So good.. I LOVE cinnamon and these hit my cinnamon spot. Something I started doing to not keep too many sweets in the house after baking is frost only enough for dessert. Crumble the rest and make cake pops for Randy to take to work. Just crumble the rest of the cupcakes add the leftover frosting. Mix together. I use either almond bark or the candy melts to coat. I have a lot of fans at Randy's workplace because of it. Mint JulepGeorgiaWhen Amy mentioned the Kentucky Derby my first thought was.. I Want to go!! But I can't.. So I baked something in honor of it. I think we both went with the Mint Julep flavors AmyWhile the rest of you celebrate Cinco De Mayo I'll be preparing for the Run For the Roses. That is a complete lie, I'll be working. However, I am rooting for My Boy Jack (Odds 16-1) in the Kentucky Derby. I was scanning the latest issue of Good Housekeeping when I found what looked like a tasty cupcake. Mint Julep Cupcakes! Sans booze and fresh mint. But I made two cupcakes as I would devour every cupcake I would bake. I also made a few bottles of Mint Julep Iced Tea. I don't remember the recipe but it's basically sweetened iced tea with mint, bourbon, fresh lemon and fresh lime juice. Here is the link for the recipe: This years winner a horse named Justify!!
