AmyRejoice! I found a recipe that doesn't require an oven and can be sold in a bakery. I dug through the bags of recipes that T. gave to me and found a newsletter called Country Living that was sent out by the East Central Oklahoma Electric Cooperative, Inc. from 1985. There's about a dozen recipes in the newsletter from a bunch of God fearing, law abiding, presumably electric bill paying citizens of east central Oklahoma. There's a plethora of recipes including An Unusual (that's how it's spelt in the newsletter) Spinach Treat That Popeye Might Like! That's the headline for the My Favorite Recipe Page. By the way, it's basically an egg salad sandwich with chopped spinach mixed in. Unusual indeed! I guess that was Mrs. Letha Allen Johnson of Bristow's posh egg salad sandwich that everyone in the Rotary club gave enthusiastic reviews and encouraged Mrs. Letha to submit. Lo and behold! It was the headliner of the newsletter. There's a recipe for Hot Bacon Cheese Roll that includes Cracker Barrel Coon cheese? Say what? All sounds delightful, however, it's Terri Pierce of Mason's recipe that caught my eye! Chocolate Scotcharoos 1 cup sugar 1 cup peanut butter 6 oz. butterscotch chips 1 c. white syrup 6 c. rice krispies 6 oz. chocolate chips Mix sugar and syrup in saucepan until it boils. Take off heat and stir in (peanut) butter. Add rice krispies. Pour into buttered cookie sheet. Melt chips over hot water and spread over rice krispie mixture. Chill 5 to 10 minutes before serving. And there you have it. Straight out of the 1980's. Georgia In the event you feel the need to go into a diabetic coma.. This is the dessert for you. The husband and I introduced Savannah to "The Great British Baking Show" And like everyone else who watches that show, she felt the need to bake. So I asked her to find a recipe she'd like to make. She ended up sending me a video of this brownie, strawberry concoction. No recipe, just a visual of how they made it. So we were winging it.. This is the result. It was INSANE!! We kinda took the cheater way of making it. 1 box of our favorite brownies strawberries caramel sauce (just because) Chocolate sauce (this I actually made) Whipped topping Sprinkles (whatever your favorite is) Bake brownies per box instructions. I allowed them to cool overnight Savannah was the official dessert constructor (Which is why it looks so lovely) Cut brownies into good size pieces Cut a round hole in the middle (I used a smallish biscuit cutter) Place strawberries in the newly cut center Pour caramel sauce over strawberries Cover in chocolate sauce Dollop of whipped topping Sprinkle to your hearts content. It was REALLY, REALLY good.. And REALLY, REALLY sweet.. But.. Every single piece was made with love.. AmyIt is too freakin hot to bake. My kitchen is a furnace without the oven on. I'm eating loads of fresh produce and cold soups and salads. But I am committed to this cause. I beg, cut me some slack this summer. Because it is too freakin hot. But I digress. I may have mentioned that a co-worker told me about a local farm and I've been purchasing about 95% of my produce through Custar Farm in Okemah. I even get fresh eggs! Got a mother seedless watermelon...hello watermelon poke bowl. In this case I'm using strawberries. I was digging through the July 2016 Bon Appetite and discovered a simple recipe that can be the base for a multitude of dishes. Quick-Pickled Strawberries Makes 1 quart (I made less since it's just me) After you finish the strawberries, hang on to the brine, which can be used in place of mild vinegars. 1 lb. ripe but firm strawberries, hulled, halved if large 1 1/2 cups white balsamic vinegar 1/4 cup sugar 2 Tbsp. kosher salt Place strawberries in a 1-qt. heatproof jar. Bring vinegar, sugar, salt, and 2/3 cup water to a boil in a small saucepan over medium heat, stirring to dissolve sugar and salt. Pour over strawberries. Let cool;cover and chill. Strawberries can be pickled 5 days ahead. Keep chilled. Here are a few ideas for using these strawberries: Salad. Gussy up a strawberry-spinach salad: the pickling liquid doubles as a base for the vinaigrette. Sundae. Spoon over a sundae for a sweet-and-sour sauce (try it with coconut ice cream) Gazpacho. Blend into a gazpacho: fresh and pickled strawberries, tomatoes, cilantro, and a little pickling liquid. Top with pistachios and yogurt Nice ideas for meals that beat the heat. I couldn't make my thumbprint work, so I used my pinky finger for the indentation. I have made these cookies three time since the first batch two weeks ago. They are that a-mazing! My boss lady even told me they were the best cookies she has ever tasted and asked if I would sell them to her. Haha! The recipe calls for raspberry jam, but I explored an little and used fig preserves and apricot preserves. Happy Sunday!! Georgia AmyT asked if I'd bake peanut butter cookies for him. I said , "And why not?". I found this three ingredient deal online. It doesn't work if your peanut butter basically melted into a jar of goo. I didn't want to toss it, so I went to Betty Crocker's website. I was able to salvage the three ingredients by adding more ingredients. They turned out OKAY. Georgia Happened on a little donut shop this morning called.... Allen's Donuts in Rancho Cordova. It's a locally own donut shop where the baker arrives at midnight.. Because that's the time to make the donuts. One man as he was entering the shop said he's lived in the area his whole life and said this is the best donut shop around.. I'm sure we'll look for and test others, but for now he was spot on.. The husband got a maple bar and I got the chocolate. You could tell at first bite that these were freshly made.. YUM!! Allen and donuts.. Can't go wrong there. Happy Independence Day Weekend!!
