Cammy It seems to be a cookie time of year. Perhaps I'm just practicing to find the cookies I want to make for Christmas. :) These Coconut Pecan cookies came out very good. They have to be eaten fairly quickly though, as they dry out fast, even in the sealed cookie bin! It doesn't give a bake time. I ended up making these probably double in size and baked them around 12-14 minutes.
Cammy I once again found myself with bananas that need to be used. I was also craving oatmeal cookies so I did a search for banana oatmeal cookies resulting in a recipe that required two bananas, one cup of oats, and 1/3 cup chocolate chips. I substituted the chocolate chips with raisins. Here is a picture, but BLECK! These were gross. Do not attempt! I may as well have just thrown the bananas in the trash and saved the oats and raisins! Still craving oatmeal cookies, I fell back on the recipe on the oatmeal container. Some things are simply meant to be done the standard way. I shared some with my mom and still have some left. However, I don't imagine they will last for too much longer. Afterall, I wouldn't want them to get hard and stale! Georgia This week I was back in the kitchen and trying to recreate the amazing chocolate covered key lime pie we had in the Florida Keys. Did I succeed? Not entirely. Were they delish? Depends on who you ask Actually, they were pretty freaking amazing. A couple of things that happened during the making of these little lovelies. I couldn't find my cupcake pan liners so I ended up just using a sheet pan and cutting them in circles once they were fully cooled off. Doing them this way made them way too thin to use a stick. So these were more like Key Lime Pie bites Hits and misses. Some weeks it's all about trial and error
Until next week, Cammy & Georgia Cammy Carrying the German theme into Sunday, I made this delicious Peach Kuchen. I was worried about my hands hurting from "cutting in the butter" but it was not bad at all. The crust is actually more like a shortbread crust than anything else. The peaches were very sweet. I did bake an additional 10 minutes as the crust didn't seem to be done under the peaches. That may well be preference though.
Cammy My pie runneth over. No, Seriously, there is a bottom crust. I promise!
