So I scanned a few cookbooks and discovered this delightful and healthy-ish cake. I augmented it slightly. Medieval Honey Cake Adapted from The Vegetarian Lunchbasket by Linda Haynes Ingredients:
Makes 1 8-inch square cake; serves 8 There are a few variations of this cake. Lemon cake: Omit currants. Add grated zest and juice of one lemon and 1 teaspoon of lemon extract. Spice Cake: Omit currants. Use molasses in place of honey and add 1 cup mashed squash or sweet potato. Reduce water to 1/2 cup and add 1/2 teaspoon each ground ginger, ground cloves, and ground cinnamon. Chocolate or Carob cake: Omit currants. Add 4 tablespoons carib powder or cocoa powder, 1/2 cup more honey (to the cocoa), and 1 teaspoon vanilla extract. A cake you could eat for breakfast. Or if you pack a lunch, a lovely little sweetie. In the case of the Sunday baking I referred to their book A Year Between Friends. Each month has at one recipe from each lady. September has Peanut-Crispy Rice Bars. Having made some Rice Krispie bars recently, I discovered that I do not like Karo syrup. They were sickly sweet. These bars use organic ingredients and are sweet without being sugary sweet. Mind, I used Jif as opposed to organic peanut butter. Only because I had Jif on hand. My bars didn't turn out quite as uniform as they should but they taste far better than my last endeavor. Georgia Saturday was Randy's cousin Angie's birthday. Her request was Corned Beef and Cabbage. Which auntie made. It was delish by the way. Whenever we have dinners together we always try to have a "theme". So knowing that auntie was going make Corned Beef and Cabbage I wanted to stick with the whole Irish theme. Since Corned Beef and Cabbage is pretty much a meal unto itself I decided to make a traditional Irish Soda Bread. I've never made soda bread before so I wasn't too sure what to expect. Considering it's four simple ingredients it was much tastier then I expected. And not nearly as dense. The next time you make yourself corned beef and cabbage you may want to consider making some. I scoured my cookbooks and found this surprisingly simple recipe. For my not-so-good baking skills this was rather ambitious. Since this was my first time making these I didn't attempt to make it look "decorative". Having said that, these were simply divine. I will make this again and again. Apricot, Almond and Ricotta Slices From Breakfast Lunch Tea by Rose Bakery Paris, France They used apricots and mentioned that they can be replaced with berries, peaches or juicy green figs Makes 15-20 squares 1 cup unsalted butter, softened, plus extra for greasing 1 1/4 cup caster sugar (I used about 1/2 cup Splenda. I'm thinking of trying unsweetened apple sauce), plus extra sugar for sprinkling 6 eggs, separated Grated zest and juice of 3 lemons 2 1/2 cups ground almonds 1/2 cup all-purpose flour Pinch of salt 1 1/2 cups ricotta cheese About 12-14 apricots, halved and stoned Apricot glaze (optional, I opted not) Preheat the oven to 350°F Butter a 8x11 baking tin and line it with parchment paper. Beat the butter with the sugar till light and creamy. Add the egg yolks, one at a time, beating well after each addition, and then the lemon zest and juice. Sift and mix the ground almonds, flour and the salt and fold into the mixture. In a separate bowl, beat the egg whites until they form stiff peaks, then fold them into the mixture, half the quantity at a time. Make sure to use a metal spoon so that you don't deflate the batter too much. Finally, carefully fold in the ricotta and pour into the prepared tin. Place the apricots, skin-side down, on top and sprinkle with a little more sugar. Bake for about 45 minutes or until just set. Cool in the tin, then carefully cut into slices when cool. We sometimes brush the apricots with an apricot glaze, or sprinkle a little more sugar over them while cooling. I didn't sprinkle sugar on them period. And I lived to tell. NikitaThis cake was the scraps of a failed dry white cake. I don't know why it didn't rise or why it turned out so hard. As I was about to throw it away, Matt encouraged me to turn it into something else. So I soaked it in the three milks and made a whipped cream to frost it. It was divine!
