Kudos to Nikita for another gorgeous cake Cammy When he brings home huge amounts of rhubarb and you still have rhubarb from last year in the freezer, what do you do? Well, today I made a rhubarb pineapple upside down cake. I have to say, this one is an absolute win! I will figure out what to do with the rest of it tomorrow or even the day after. I suspect a rhubarb crumble may also be in our future Georgia This is a great cheater dessert. We had some apples that were pretty close to the end of their life and some refrigerated crescent rolls. Super simple. You can either use apple pie filling. It make your own. Take your crescent triangles and line a cupcake tin. Fill each with the apple pie filling, fold over the triangle part of your crescent. Bake for about 15 minutes in a 350 oven. Glaze is nothing more than milk and powdered sugar. I added a little cinnamon because.. Cinnamon. Nikita One of Nikita's beautiful cakes she's made this week. I love that we were all in the kitchen this week.
It's fun looking at all the bakes.. I might be slightly biased but Nikita has such a great gift and I love how she shares it with the people she loves. Cammy, Georgia and Nikita NikitaI'd like to think that I could cross this challenge off my bucket list, but I feel I can do better. Jelly Roll cakes have always impressed me. I remember making one with my mom during my middle school years (back when you could bring baked goods to school). It was a Black Forest cake with chocolate and cherry flavors, but I didn't remember the difficulty of it. This particular recipe calls for a very light, fragile and fluffy carrot cake to be rolled up. Trying to remove this from the pan onto a kitchen towel proved to be extraordinarily challenging. I had to recruit help from ye ol' teenager. Anyways, part of my cake broke. 😭 But the picture above was what I saved. The flavors were incredible, and we enjoyed it during our Labor Day celebrations! Carrot Cake is among one of my most favorite desserts. Next time, I would also whip the frosting with my new KitchenAid whisk versus the mixer attachment because I felt it was a little thick. I like a fluffy frosting. Next time, for sure!
Georgia What to do with leftover key lime juice? Make whatever you want! The crinkle cookies are the hubs favorite type of cookie and he LOVES key lime pie. Key Lime crinkle cookies = match made in heaven Cammy Sometimes you just have to go with the tried and true. I needed to use up a tone of blueberries, so blueberry pie yet again has graced our plates. Baking in the kitchen is some of the best therapy. This week was much needed.
