Amy Uncle Paul and comfort food. I guess that would be the theme for my submission. On Saturday last week we said our last good bye's to Uncle Paul. He wasn't my uncle by blood or marriage but out of his acts of kindness and generosity. He was a good man and an uncommonly kind human being. He helped Tremain and I during a very difficult and fragile time in our relationship. Whenever I would pay him a visit there was almost always music playing. When I returned home from his funeral I was glum and hungry. I didn't eat beforehand. So I turned on some 70's R&B and headed to my kitchen. Much like Uncle Paul would have done. I'd recently read an article about an old cookbook that then Senator John Kennedy's wife Jackie had submitted a recipe for waffles. With Al Green belting out Love and Happiness and the waffle iron heating I felt a whole lot better. By the way, say what you will about Jackie Kennedy, she made some bitchen waffles! NikitaWell, we woke up this morning with sore feet, aching backs, and extreme fatigue. BUT....the party was a success! For two hours, there was screaming, laughing, running, eating, and drinking all in the dim glow of blacklight and neon colors throughout the house. My favorite one-liner from the evening spoken from one of Christopher's school friends, "This party is EPIC!" Of course, the birthday boy needed a cake just as cool as the party, so I made a Galaxy Mirror Cake. In the light, you can see the shimmer of the edible glitter dust and the melding of colors like blacks, blues, and pinks. It was just as delicious with funfetti on the inside. The glaze is poured over a buttercream frosting base,. When the glaze sets, it becomes stretchy sugar. When i pulled the candles out, the glaze stretched up then bounced back into place. It was not difficult but definitely time consuming. The 9-minute video on YouTube was misleading because I spent about 3 hours on the entire cake. I found a stainless steel french rolling pin and pastry brush for less than $15.00. I liked the idea of stainless steel. Seems easier to clean. And it is. On my birthday I took a day trip to Pawhuska to visit the Mercantile. This is The Pioneer Woman's joint. I decided to purchase a pie plate from her signature line of wares. We just had apples as the challenge for Saturday Bites but I felt an apple pie was the right thing to christen my new stuff with. I found a unique recipe that ended up tasting a little sweet and tangy. I did mess up a bit in that I made dough for a 9-inch pie shell and apparently it's a 10-inch pie plate. I was too lazy to fix the problem so this pie crust isn't pretty and fluted. I'm more about taste than looks anyway. Amy, Georgia and Nikita Georgia Every Sunday in the Minghelli house is family dinner and we try to have some kind of a theme. One weekend was Mexican another was breakfast. (Well that happened on Saturday morning) The point is. Once a week we open our home to family for food, laughter, conversation, but most importantly love. Today's theme is German cuisine and on the menu is Schnitzel, buttered noodles and this lovely Bienenstich: Bee Sting Cake. Just a heads up. It's a little involved. Make the filling the night before. Well...everyone really liked it. No, I'm going with ecstasy. It sounds better. I found this recipe in the bags of recipes Tremain gave to me. It appears to be a clipping from the Sunday coupons or some such. The sort the have certain products from said coupons combined to make different dishes and baked goods. Having said that, I improvised based on the fact that I was unable to find a key ingredient. I'll type it up as is and point out where I made changes. This would make for a fun treat for Halloween. Many many years ago I happened upon a recipe for brownies in which one of the ingredients was applesauce. I gave it a try. While they were wonderfully moist I was still not impressed. Back then I wasn't very adventurous in the kitchen. So any new dish was generally disappointing. Now a quarter of a century later I decided to revisit brownies made with applesauce. I don't know if my palette changed, my baking skills improved or if this is just a better recipe. Most likely all three. While these were a success, I think I may tweak the recipe a bit to make it a little more diabetic-friendly. But for now, a modest amount didn't do much damage to my blood glucose.... GeorgiaSo my sister was super amazos and gifted me with a subscription to Milk Street. Milk Street is a new(ish) magazine put out by Christopher Kimball. If you love cooking or baking or even if you want to know or understand more this is the magazine for you. I shared the magazine with the husband who's cooking skills are pretty basic. I thought it would be something that he would like and also appreciate because Christoper does not just fill the pages of his magazine with recipes. He explains the process. What happens to a carrot when you shred it? Is it necessary to peel ginger before using it? I hope Milk Street and Christopher Kimball have a very successful run. Oddly I did not have any brandy or rum in the house. Even more odd is I have not one but 2 bottles of bourbon. So I substituted the brandy with bourban. This was my attempt at recreating it. Recreating foods from his childhood is not something I do because smells and tastes are so closely connected to memories and oftentimes the memory far exceeds the actual experience. Amy Tremain requested sugar cookies and I said," Why not?". I can you three reasons why not! I'm diabetic. In less than an hour sugar cookies taste stale. And after eating just one, I feel ways about stuff. All of that aside, Tremain earned whatever cookies he wanted. I'll spare you the gorey details of how the poor guy earned his cookies! This also gave me a chance to test run my new Autumn/Halloween cookie cutters. Remember a couple of weeks ago when I made Peanut-Crispy Rice Bars? Turns out the same book from whence that recipe came has a sugar cookie recipe. Without further ado: My Mom's Old-Fashioned Sugar Cookies From: A Year Between Friends:3191 Miles Apart Note: MAV was pregnant with her first child during this year-long collaboration. Her mother passed away shortly before the birth of her daughter Luna. Naturally I began to think about our mother and memories of making sugar cookies at Christmas with red plastic cookie cutters. I guess perhaps it isn't just about making sugar cookies after all.
On a well-floured surface and working with one ball of dough at a time, roll out the dough to about 1/4 inch thickness (the thinner the better). Leave all of the dough that you're not working with in the fridge; it's easier to roll out and cut when it's cold. Using a floured cookie cutter, cut out the cookies. Using a spatula, gently lift and place the cookies on a prepared cookie sheets. The cookies do not spread so they can be placed rather close together. Sprinkle the tops with the cinnamon-sugar mix, if desired, and bake for 8 to 10 minutes, until the edges start to show a golden brown. Repeat with the remaining dough. If you want to reroll the scraps you can put them back into the refrigerator to chill a bit before adding them back into one of your dough balls. Store the cookies in an airtight container for up to a week. NikitaMy co-worker had his 21st birthday this past week and requested a peach pie to celebrate. I found this nifty recipe on Pinterest which uses pre-made pie crust and canned peach pie filling. People we're so impressed that they started to ask me for the recipe. I was a little embarrassed to tell them it was this simple. 🤣
With Sunday Bakery there is no theme. It's all about baking (and the occasional non baked sweet). So whatever we bake is a surprise to the other. This week it looks like we covered the trifecta of baked sweets. Cake, cookies and pie It's bunny bunny October 1st.. Lots going on this month. Amy celebrates her 29th birthday (again), Nikita's mom will be visiting her in Arizona and the husband and I are going to try to get go to Yosemite..
