A simple and hearty casserole perfect for chilly days! GeorgiaI found this recipe the other day and thought.. I like cinnamon and I like baking. Seemed like a match made in heaven.. I was not disappointed. A couple of side notes. The first is.. I normally read through the instructions before I get started. But it was cookies so I just assumed I knew what I was doing. And for the most part I did. For the filling I melted the butter and combined it with the sugar and cinnamon.(oops) When the recipe calls for you to layer them separately. Well I wasn't about to let it go to waste so the first rectangle got the crumbly filling and the second got the correct loose filling. Both were equally delish, but I really preferred the oops. First off it wasn't as messy. Secondly they looked nicer and third the texture was much more pleasant. But flavor wise, no difference. Your call how you do it.. Just know if you do what I did, no harm no foul. Another side note. The recipe did not call to chill the dough beforehand. I think if I were to make them again I would chill it for a few minutes before rolling it out. Make ahead tip: Baked cookies (with or without icing) freeze well up to 3 months. Thaw overnight in the refrigerator. You can chill the cookie dough for up to 2 days (step 5). You can also freeze the cookie dough before rolling for up to 3 months. Allow to thaw overnight in the refrigerator, then bring to room temperature for about 1 hour. Then roll and continue with the recipe as directed. Thanksgiving is in just a few days ya'll. Which means Christmas is oh so close. Yikes!! Where did the time go? Not Apple Pie Spice. Just Pie Spice. Needless to say, I was pretty damn excited. This blend contains several varieties of cinnamon, nutmeg, clove, vanilla sugar... I began to give serious thought to what kind of pie to bake. Then I remembered that I had fresh plums that needed eating. And I found the perfect recipe. I had to ad lib here and there and I remembered to up my ingredients for the pie shell. Banner day. Purple Plum Pie from Farm Journal's Complete Pie Cookbook The Farm Journal says this pie is vest when faintly warm with nippy cheese (?) slices or scoops of ice cream. I just enjoyed it with some ginger tea myself.
I used combo of raw sugar and Nektor honey granules sparingly because I wanted to taste the plumbs and pie spice. I was not disappointed. Many years ago as a very young girl (we won't say how long ago, but let's just say it was a VERY long time ago) My family and I along with my father's cousin and his family spent several weeks in Lancaster County PA's Amish country. There are many things I remember about the trip. Several I'd rather not.. But one in particular was going to an Amish market and having a whoopie pie for the very first time. It was so yummy..
