GeorgiaChristmas Eve sitting in church. My mind wandered (as it often does). All over the world millions of people gathered to celebrate the birth of the new born King. We are not alone in our praise to the greatest gift that was ever given to mankind. Christmas day we celebrated (for the first time since we've been together) with family. This Christmas was especially blessed for me. Red Velvet Oreo Truffles I used red velvet oreos (yes they are a thing). 36 cookies.. Separate the cookies from the white center. Crush the cookies (I used a food processor) Crush until fine.. The recipe calls for adding cream cheese to the crushed cookies but since I used the red velvet oreos and their middles were like a cream cheese frosting I used it along with some cream cheese. (sorry I didn't measure, I just blended until the consistency allowed me to form little balls). Place in freezer for no less than 20 minutes.. I kept mine in a little bit longer.. Before pulling your little oreo balls out of the freezer melt white chocolate (I used the white chocolate candy melts, they are perfect for this) I put toothpicks in the oreo balls before freezing them.. It made dipping them into the white chocolate so much easier. Dip oreo balls in melted white chocolate.. If you want to decorate after dipping do it pretty quickly because the chocolate will harden and decorating will not be easy.. Let chocolate harden and you are good to go. There are oh so many things you can do with these.. I've seen where people have used just plain oreos.. Added a little peppermint flavor to the cream cheese and sprinkled with crushed peppermints.. If I were to make them again I think I would make them smaller.. Nutella Fudge Ingredients
Make sure not to add too much Nutella, it should be just 1/2 cup. Do not scrape the can of Sweetened Condensed Milk, doing this adds just slightly too much liquid and makes it harder for the fudge to set. AmyThis is a recipe that is very hard to mess up. Easiest Ever Pastry Dough Rustic Sour Cream and Cheddar Mashed Potatoes Nikita Ok ladies....I cheated. This is an Angel Berry Trifle made with Angel Food Cake, but I did NOT make the cake. I do know you need a special pan to make Angel Food Cake because when it is done cooking in the oven, your supposed to flip it over and let it rest and stretch. I watched an episode of Good Eats with Alton Brown, my fave. Nevertheless, this trifle was amazing! Not too sweet but very light. I brought it to a friend's home for a dinner party. Melt chocolate in a double boiler or a heatproof bowl set over a pan of simmering water, stirring. Pour into baking sheet, and spread in an even layer. Immediately sprinkle toppings over chocolate. Refrigerate until firm, about 1 hour. Peel off parchment, and break bark into pieces. Delightful! GeorgiaWhere I failed with the bread this past week I succeeded with cookies. Last Sunday I hosted a tea / cookie decorating party. Where everyone noshed on scones, mini quiche Lorraine and mini chicken salad sandwiches, drank Earl Grey and decorated what would be there Christmas Cookies. I made the cookie dough up during the week. Kept in the fridge until cookie day.. Rolled them out and then cut them using several cookie cutter shapes. Now I started the process of rolling and cutting until Lexie got here (Husband's nephew's girlfriend) who immediately started going through the container of cookie cutters to choose which ones she wanted to use. She grabbed the rolling pin and I grabbed my camera. Several years ago I bought a smallish clear tub to hold nothing but my cookie and cake decorating supplies. From piping bags and tips to cookie cutters and sprinkles. (sorry no pic of the boring tub) Note the snowflake cookie above that is missing a piece.. Quality control I made two different types of cookies. Sugar and gingerbread. The two that I consider to be the best decorating cookies. If you've never used royal icing for cookie decorating you don't know what you are missing. Super simple recipe. Pinterest is always my friend. The hands down winner of the cookie decorating was Michael (Randy's nephew, Lexie's boyfriend) I've decided if I ever need to bake a cake or make cookies again I'm recruiting Michael to decorate it. I had cookie boxes on hand for everyone to pack up their decorated cookies to take with them. The best part of the day. Everything.. Food, family, cookie decorating.. Lots of laughs. Instructions: 1. Preheat the oven to 350°F. Grease two baking sheets. 2. Beat the butter and sugars together until soft and fluffy. Add the egg, flour, oatmeal, and chocolate chips and mix together until smooth. 3. Place about 16 large spoonfuls of the mixture, 2 inches apart, on the baking sheets. Scatter dried cranberries over each spoonful. Bake in the oven for 10 minutes, or until the cookies begin to brown around the edges but the centers remain soft. Do not overcook or the chocolate will burn. 4. Leave to cool on the baking sheet for 15 minutes before transferring to a wire rack to cool. I rather enjoy these simple little treats. Freeze option: Cover and freeze unbaked potpies up to 3 months. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pie on a baking sheet; cover edge loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; remove foil. Bake 55-60 minutes longer or until golden brown and a thermometer inserted in center reads 165°. Yield: 2 pies (6 servings each).
