CammyTorte is the theme of the week. This was my second sweet torte of the week and certainly my favorite of the two! I'm going to just say "Almonds FTW!" This one will be made again and again I think. I might have underbaked it just a tad, but I like that it is so moist with nary a hint of dryness. I cut into this before it was cooled enough and broke the piece off the tip -- still delicious! :) GeorgiaThis week was a white bread kinda week. There's something comforting about making bread. Maybe it's the process. Or maybe it's the yummy bread smell while it's baking. It most definitely is the slathering it in butter while it's warm part. Either way. I LOVE snickerdoodles.. because.. Well.. Cinnamon. I will legit pass up chocolate for cinnamon all day every day. Oh.. And I like chocolate. Also.. How can you not love anything called snickerdoodles. I think the only think I would do different next time is make them smaller. Otherwise these were indeed the best. Enjoy, Georgia GeorgiaSince moving back to GA, the hubs and I have hosted quite a few dinner parties. Friends, family. Friends & Family.. Casual, fun. Never fancy. Just spending time with our favorite people. Well a few months ago we had a couple of our nephews over for lasagna. One month it was for some of Randy's best tacos (EVER). We decided to start something new and have a monthly showdown. The first showdown was Sopapillas (Pretty sure there's a post for it). Last night we revisited Lasagna. Zane's lasagna had fresh basil and mozzarella, Dora's (Brandon's girlfriend) also had fresh basil and a yummy cheese blend and mine was a classic Al Forna with a béchamel sauce. We had the harshest judge in the history of the Minghelli/Pickering/Fadley showdown. Zane and Morgan's oh so close to being 8 years old son Gabriel. He did not critique with flowery words. He just straight up gave everyone a 10. Or maybe it was 10,000. Either way. According to Gabriel we all won. I like that kid. I also made some garlic knots ( I thought they were way too tough, but everyone else seemed to like them) and some key lime ricotta cookies. (very light, fluffy and full of key lime flavor) Gabriel claimed a spot in the sunroom as his own and was also kind enough to leave me a list of things to have at the house for him when he comes to visit. I can appreciate a person who knows what they want and isn't afraid to ask for it Photo at top is food, Brandon and Dora (Dora is loving on the newest member of the family, Ember) As always the absolute best part was spending time with some of our favorite people.
Our next showdown is going to be dumplings. Date and time tbd Until then! Georgia CammyI have an intern working with me this semester and she and her future MIL had these wonderful cannoli cupcakes made for her fiancé's birthday. I was lucky enough to have one shared with me. OMG, they are soooooo good! Needless to say, I had to try and make some myself. I searched out a recipe and here we are. Mine aren't nearly as pretty as theirs were but it is certainly just as tasty!
GeorgiaSince moving back to GA the hubs and I have been incredibly blessed to both have the weekends off. So we've started doing some early Saturday morning hikes. Yesterday was no exception. But this time we headed out with a couple of friends. But before we did, I made up a batch of these yummy chocolate chip muffins.
How good were they? Out of 18 this is all that's left. I don't know what it is about baking. But it always brings me peace and joy. Of course that might have more to do with the sharing. I may have to look for a heartier muffin for our early morning treks. Let me know what your favorite is. I came across these last week when I was looking for dip recipes. The name and ingredients looked awesome! I didn't realize until I was actually following the recipe this morning that this is a copycat of the Red Lobster biscuits. Win, Win, Win!!!!! I can have the biscuits and not have to set foot in that restaurant! Yeah! GeorgiaWhat do you make with all the yummy homemade yogurt the hubs has been making every week?
Glad you asked. Frozen yogurt popsicles. Between the homemade yogurt and the popsicle forms from my sister I was good to go. The verdict. Tasty. Not overly sweet. Will I make them again? Yes Yes I would Georgia
End result I LOVED it. This may be my favorite yogurt ever. Plain no flavor. I added a little strawberry preserve, granola, crunchy nuggets and drizzled a little honey. Seriously. I could eat this every day. Randy didn't like the tanginess. If you are not a fan of overly tangy, cook for less time. Save a scoop of the yogurt (with the whey) This will be your starter for your next batch. Also, if you drain any of the whey off, save that too. Many uses for whey. You can add it to a sourdough starter, add to pancake mix, etc We will definitely be making more.
Zane and GeorgiaLast month during an evening of the best tacos with the best people dinner the topic of sopapillas came up. Now most folks from around here have no idea what they are. After talking about it for a good 15 minutes we decided to make our next gathering all about the sopapillas. By we, I mean my nephew Zane and myself. And so the Sopapilla showdown went down.. Zane and I both made a batch. Made sure we had a full bottle of honey (if you eat them any other way, you're doing it wrong) The judge was Randy. (The hubs) What was he looking for in the perfect sopapilla? Flavor (of course) Color (the perfect golden brown) Poofiness (the more poof the better) The sopapilla that won? Zane's! Where mine had the correct poofiness and were a lovely golden brown. Zane's killed it on flavor and were a beautiful dark golden brown. The difference in recipes (I don't have Zane's, but he told me what he used) Mine was pretty basic. Flour, baking powder, shortening, salt and water. Zane's didn't use the shortening, but had milk and honey in them. The secret to the perfect poof.. The thinner you roll them out the better.. No seriously.. If you think it's thin enough. Roll it some more. In all fairness the real winner is me. Spending time with some of my favorite people is always the best. Click the link below for more info on sopapillas New Mexico Culture NikitaI tried a new cinnamon roll recipe with raisins (and of course butter cause it's Paula Deen.) What's nice about this recipe is that you can whip up the dough and rolls the night before, then pop them in the oven when you wake up. The only resting I allowed after being taken out of the fridge was while the oven was preheating - 5 mins max. They were fluffy and buttery. The icing recipe did include more butter, but Matt said NO MORE BUTTER. LOL! So I just made a simple glaze with powdered sugar, milk, and vanilla. The raisins were a match made in heaven. Soft and plump, and I didn't even soak them. Now I'm thinking of revisiting the Orange Rolls I made in Sofia but add some cranberries! Hmmmmm...... Thankfully Nikita took care of the baking for our Sunday..
