Sunshine Wraps
~2 lbs chicken breast, cut in small pieces
~1 cup onion, diced
~2 cups cut pineapple (fresh or canned)
~3 cups red & yellow peppers, de-seeded and cut into strips
1 tsp salt
¼ tsp black pepper
Olive oil
Tortillas
Cook chicken in a large skillet over medium heat with the olive oil, salt, and pepper.
Once the chicken is mostly cooked, add everything else. Cook until onions are translucent and the peppers are tender.
Serve wrapped in a tortilla
