Warm Bagels with Poached Apricots
1 1/3 cups dried apricots
1 cup fresh orange juice
1/2 teaspoon orange flower water
Cinnamon or cinnamon and raisin bagels
4 tsp. of pure fruit orange or apricot marmalade
4 tablespoons fat-free sour cream
I topped my bagels with culinary lavender and golden raisins. Chopped pistachios would work nicely as well.
Preheat the oven to 325F°.
Combine the apricots and orange juice in a small saucepan. Heat gently for about 10 minutes
, until the juice has reduced and looks syrupy. Allow to cool, then stir in the orange flower water. Meanwhile, place the bagels on a baking sheet and warm in the oven for 5-10 minutes.
Split the bagels in half horizontally. Lay one half, inside uppermost, on each serving plate. Spread 1 teaspoon orange marmalade on each bagel.
Spoon 1 tablespoons of sour cream into the center of each bagel and place a quarter of the apricot compote at the side. Sprinkle lavender and golden raisins over the top to decorate. Serve immediately.
I spread the sour cream over the entire bagel. But spooning it into the center would be aesthetically pleasing.
