Watermelon Cucumber Salad

- About 1/4 a large seedless watermelon or 1 small watermelon
- 2 small (Persian-style) seedless cucumbers, thinly sliced Honestly I just used about half of a regular cucumber and nothing bad happened
- 8 oz. Feta cheese
- 1/4 cup toasted, salted pepitas
- Olive oil, for drizzling
- Sea salt and freshly ground black pepper
Instructions:
- Cut watermelon into wedges or triangles.
- On a large platter, scatter a thick layer or watermelon, followed by a thinner scattering of cucumbers, Feta and pepitas.
- Drizzle lightly with olive oil and season with salt and pepper.
- Repeat in layers until the ingredients are used up.
- Top with a final drizzle of olive oil.
