Jen If you haven’t noticed by now, my theme choices revolve around something I need to use up, and/or something I got a good deal on! I’ve had a big can of garbanzo beans (chickpeas) in the pantry for a while, so I figured this challenge would get me to use them. I’ve used chickpeas to make hummus before, which is probably what I had in mind when I bought them. I already have some pre-made hummus in the fridge, so I wanted to do something different. Google lead me to a recipe for chickpea nuggets! I used ground up italian croutons to coat mine. The recipe made around 2 dozen nuggets. They were pretty easy to make, and I really liked them. Delicious with bbq sauce. Yum. Amy One of my favorite "go to" meals is beans on toast. It's rare that I prepare it the same way twice. But I shall share my general recipe: Beans on Toast Bacon, diced Onion, chopped One can of baked beans Black pepper 2 tablespoons butter, softened 1 tablespoon honey Bread of choice(white actually works best), toasted Heat a medium skillet over medium-high heat. Add the bacon ( I usually use 2 slices, chopped) and cook until crisp, about 5 minutes. Add the onions and reduce heat to medium. Cook the onions with the bacon until they are soft, 5 to 6 minutes more. Stir in the baked beans. Heat the beans through, then reduce the heat to low. Season with black pepper. Combine the softened butter with the honey, then spread the mixture evenly on the toasted bread. Serve the beans with honey-buttered toast. Nikita y Beans beans.....good for the heart! The more you eat 'em, the longer you live! Pinto beans happen to be one of the most nutrient- dense foods on the planet. Now, I did load these beans up with bacon and other delicious ingredients. This recipe took about an hour to make and simmer, and it got better every single day it sat in the fridge. We first ate them with some roasted hot dogs. Don't Judge: I'm single-parenting our child at the moment while my husband starts his new career with a trip to Central America. I needed something easy. Then I ate a bowl of baked beans 3 days later. Just beans. The lunch was incredibly filling because these pinto beans are a fabulous source of protein. This morning, I wanted a brunchy kind of snack and fried an egg on top of baked beans. The. Best. Snack. Ever. The gooey yolk oozed over the baked beans which were sweet after sitting in the sauce for a week. Give the recipe a try if you are looking for a versatile side dish to use all week long. Georgia I made this earlier in the week and almost forgot what I made. Not that it wasn't delish.. Just a lot has happened between here and there. This recipe just called for the chicken and the green beans. i added the white beans just for the heck of it. My initial thought was "I wonder how the white beans are going to taste with the lemon". The answer.. Not bad, not bad.The beans also added a creaminess to it too. Beans are so versatile. Breakfast, lunch, dinner and even as a snack.
