CammyIt's ridiculously hot and humid here in NY right now. IT's the perfect time for cold soup! This Chilled Cucumber Melon Soup did not disappoint! I added some non-fat Greek Yogurt with the extra cantaloupe when serving. MandyJenZaneNikitaThis challenge was perfectly timed because we are approaching 115F as our daily highs here in Phoenix. It's just too hot to do anything outside. Turning on the stove or oven seems unbearable because the house is already warm enough, and you can hear the air conditioner unit kick on every half hour trying to beat the heat. So - this week, we ate Cold Cucumber Soup with homemade toasted ciabatta. The soup WAS flavorful with lots of garlic, dill, parsley and cukes. BUT--> it wasn't my favorite. I pureed it as best as I could with my immersion blender and got it rather smooth, but the texture of the soup was still not appealing to me. Fun challenge; however, I probably won't be saving this recipe. You win some. You lose some, and that's the fun of the challenge. Georgia
