Jen I was wanting something “green” this week for whatever reason. I found a recipe for cilantro lime chicken that sounded perfect! I made a few minor adjustments, including using green tortillas. It turned out pretty well! I wish I took more pictures – I must have been too hungry. 😊 Mandy Nikita Eating fresh every week is something my kitchen prides itself on. No matter what the dish might be, we always try to add some healthy greenery on the plate. It's not only more beautiful to look at before devouring, but it also helps balance the calories from the constant rotation of baked goods in my kitchen. This week if you ate at our house, you would have had Asian Chicken Lettuce wraps on Monday; BBQ Sausage, Broccoli & Potato Sheet Pan on Wednesday; Roast Chicken with Lemon Risotto & Asparagus on Friday. We. Love. To. Eat. Georgia I was so excited about this challenge. Something a little lighter and "healthier". But.. I got everything I needed to make my "green" dish. But.. That's where it ends. It was a busy work week and a busy life week. So all I have is this plate of avocado toast. Green? Cammy I decided to get Saturday Bites out of the way early this week. So, Sunday, when the temp outside is finally down to 56 degrees outside but still 75 degrees inside, I turned the oven on for the third time in the day. This dish was actually pretty quick, even with cutting and cleaning the fresh broccoli. I made the addition of some smoked sausage to make this a one pan meal. It was the perfect compliment. Of course, I used nearly double the cheese, because, well....cheese! This one's a keeper that we will likely have as a regular meal. I think we should be going "green" more often!
