Georgia We had friends over for dinner last weekend. Spaghetti & meatballs are always a fan favorite. So I made Randy's grandfathers famous meatballs, served with sourdough garlic bread and salad What makes the meatballs so special. A blend of ground beef and ground Italian sausage. Whatever herbs and spices. But the king Kamehameha, make small meatballs and roll them in flour before browning (that's the real secret). After they a browned on all sides, I let them simmer in my favorite spaghetti sauce. Served over your favorite pasta Fun fact. I forgot to take a pic of dinner. This was the leftovers Jen I have been inadvertently missing the last couple weeks…I took pictures, and then was distracted by other things and forgot to send them. Sigh. For this week, I made a pasta casserole. Every time I make one of these it’s different than the last since I use whatever ingredients I have on hand. This week it was pasta shells, ground beef, mozzarella cheese, tomato sauce, roasted red peppers, garlic, onion, and salt. I cooked everything stove top, put it in an 9x13 casserole dish topped with cheese, then broiled it in the oven until it looked done. Tasty. Two thumbs up from the whole family. And now I’m going to bombard you all with my last two weeks! Busy weeknight dinner – breaded pork chops with peas and grapes. Thin cut cooks pretty fast while the frozen peas cook in the microwave. Win. Easter – we celebrated at my brother’s house and had a wonderful ham dinner with various sides including my famous cheesy potato casserole. Note that my younger daughter is egg hunting with a trick-or-treat bucket. Whatever works, right? 😊 And check out this picture I took of my older daughter in the hammock while we were there. I know I am biased, but I love it. I texted it to her Grandma, also biased, who immediately printed and framed it! Next week is my choice…let’s hope I actually send in my dish! Perfect timing because we're experiencing a cold front at the moment. And this is one of those recipes where you almost always have the ingredients on hand. Pantry staples.
