AmyI love vegetables and I decided that I'd go with a vegetable dish from Mollie Katzen's The Vegetable Dishes I Can't Live Without cookbook. While I think this woild go lovely with rice I decided to couple it with tomorrow's baking thingy. I also made it a little different from Mollie's version. Rather than make a gratin, I chose to prepare it in a cast iron skillet on the stove top. I wanted a little bit of a bite to remain. I also made a cup of yummy Hot Tumeric Latte to go with. As much as I like a good macaroni and cheese or a squash casserole, we find a joy in a simple sheet-pan of roasted vegetables. Well, are potatoes a veggie?
