JenSeveral times now when it’s my turn to choose, I’ve gotten sick and haven’t been able to make what I intended. Sigh. My husband came through with a different dish that he grew up eating, called Mexican Chef Salad. It’s really tasty, and I especially enjoy eating it because it means I didn’t cook. :) I’m not really sure the origin of his mom’s recipe, but calling it “Mexican” seems like a loose definition. He grew up in Alaska though, so maybe it seemed Mexican to his family! AmyI wasn't able to properly discern this challenge. That's on me. My bad. Anyway, here's a dish I would make when I was pretty damn broke(P.S. instead of homemade potato chips you can use Ramen or frozen potato products such as fries, tots or hash browns). Scrub and thinly slice a large potato (jacket on or off- your choice). Stick these bad boys into a saucepan of hot oil of choice (I melt shortening myself) fry them to your preferred consistency, remove with slotted spoon to paper towels. Season as you choose. Place in a pie pan and top with shredded cheese (or cheeses). Fry up some chopped bacon (I used turkey bacon) and add to pan. Stick it under the broiler for a couple of minutes until cheese is lovingly melted. Remove and add a colossal amount of condiments. Ranch dressing, ketchup, hot sauce, red pepper flakes, fresh chopped herbs, garlic powder, and grated Parmesan are a few that I like. If you want to really load it up then sauteed onions and peppers are nice. Any leftover meat from previous meals can be chopped up and added. This is meant to be a pile up that can be a meal or served up as a bombass appetizer. It's satisfying and very filling. Just wear your yoga pants during this glorious mess. Nikita When you think chips, you may consider the crunchy, salty potato slice in which you pop one time and can't stop. *Laughing at my own joke* I even know the whole backstory to Mr. Pringle and his infamous can of pressed potatoes. Ask me sometime. But today I made Apple Chips. I do not own a dehydrator, so these guys went into the oven at 200F for 2 hours. I was expecting them to be more crunchy than they were when they came out of the oven, but cinnamon on apples really is a healthy midnight snack to have a available. I used one Granny Smith and one Gala to mix up sweet and tangy. Very good! Georgia This week Jen challenged everyone to chips. Make your own or use them in a dish. So I found a sweet recipe to make my own. (I've made some before, just to see if I could) So with this being like my third or fourth try I feel confident enough to give some solid advice. Buy them. or.. Get a safe mandolin to slice them. Pretty sure I've taken a hunk out of my thumb ever single time. But in all fairness. Homemade chips are so much tastier and I really love having the ability to control the ingredients. So you can "pretend" that you are eating healthier. Until next week,
