Chicken Tot Pie From allrecipes I made mini pies half of which were dog friendly so that my dog Beatrix aka Trixaboo was able to enjoy with. Amy Georgia So this past Friday a group of people thought it would be a good idea to storm area 51. I think the only good thing to come out of it was some grown man running like Naruto and these cupcakes I made for our Area 51 party at work!! One co-worker even pulled up a chair to tell me that these were even better than the champagne cupcakes I made for her birthday last year. They were all gone.. Oh and the decorations are super cool alien rings. People running like Naruto, several detained because they didn't quite understand the repercussions of storming a military facility, a fun party to celebrate with alien cupcakes to celebrated the stupidity.. Banner week.. Amy For some reason I had a taste for granola and I remembered that 3191 Miles Apart: A Year Between Friends has a terrific granola recipe. Funny enough it's in the September section of the book. So I made a big batch of granola. But that isn't the recipe I'm sharing with you. It's this recipe from Olwen Woodier's Apple Cookbook that I am sharing with. Maple Apple Crisp You can substitute apple-pie filling fir fresh apples if you are in a rush. 1 cup granola 1/2 cup old-fashioned rolled oats 1/2 cup dark brown sugar 1/2 cup chopped walnuts or pecans 1 teaspoon ground cinnamon 1/2 cup ( 1 stick) butter 4 large apples( Winesap, Ida Red, Northern Spy" Braeburn) 1/3 cup pure maple syrup 1 tablespoon lemon juice 1. Preheat oven to 400°F. Grease a deep 2-quart baking dish. 2. In a medium-sized bowl, combine the granola, oats, sugar, walnuts, and cinnamon. Using your fingers, blend the butter into the mixture. 3. Peel, core, and cut the apples into 1/4-inch slices. Place in the baking dish and sprinkle with maple syrup and lemon juice. 4. Cover completely with the granola mixture and bake for 40 minutes, or until the apples are tender when pierced. Serve warm with ice cream, if desired. 6-8 servings This is what you call a fool-proof recipe friends. Happy Baking!

There. I was scanning the latest issue of Everyday and found a wee section on a DIY Desk Picnic. It has some nifty ideas and dead simple recipes. The dessert happens to be Apple Pie Energy Bites. No baking, I'm in. I used dried peaches instead so my version is: Peach Pie Energy Bites 3/4 cup walnuts, toasted 1 1/2 tsp ground cinnamon 1 1/2 cups (packed) dried apple rings (Or in my case dried peach slices) 1 cup crispy rice cereal 1/2 cup old-fashioned oats, toasted 1/2 cup maple syrup ( I used a scant tablespoon) 1 tbsp plus 1 1/2 tsp peanut butter 1/4 tsp ground nutmeg Since I chose not to use so much maple syrup I used extra cinnamon. 1. In a food processor, pulse 1/2 cup walnuts until finely ground. ( Do not make a paste.) Transfer to a small bowl and mix in 1/2 tsp cinnamon. 2. In a food processor, pulse the remaining 1/4 cup nuts and 1 tsp cinnamon with the remaining ingredients until finely chopped and blended. Using damp hands, roll rounded tablespoons of the mixture into balls. Roll in the ground walnuts, pressing so the nuts adhere. Refrigerate in an airtight container for up to 1 week. Makes about 18 So these will be in my mini bento box for lunch this week. |
